Do you have a recipe for Mexican meatloaf that you prefer?
I am going to make Mexican meatloaf tonight. I have looked over the recipes on the Web, but am looking for personal input.
Do you have a favorite version or a really superior version that you would like to share?
What do you think is the one ingredient that really makes it great?

Never heard of it – presumably meatloaf with chili powder or some such?
In these parts, we use ground tortilla chips in lieu of breadcrumbs, oatmeal or other “filler,” and a can of drained Rotel, hot as you can stand it, seals the deal.
A little Mexican cheese wouldn’t hurt.

@marinelife I hope you post a recipe. I clicked on the question because I was intrigued, having never heard of or considered mexican meatloaf. I only started liking and making my own meatloaf in the past few years. What my mom made does not bear mentioning, but let’s say that my perceptions of meatloaf were based, incorrectly, on that.
So….please let me/us know what you decide on. I’d love to try it myself.
@Trillian It came out great! Here you go:
Preheat oven to 350 degrees.
For Mexican Meatloaf:
½ lb Ground Beef
1 egg
⅓ med. onion, finely diced
¼ can diced tomatoes and juice
½ can diced green chiles
½ tsp. cumin
½ tsp. chili powder
1 tortilla (fried until crisp in vegetable oil) and diced (or ½ cup crumbled tortilla chips or Fritos)
salt
pepper
Mix all ingredients and form into loaf.
For Topping:
½ can pinto beans
1 Tbsp. Vegetable Oil
¼ c. grated cheese (I used cheddar because I did not have jack cheese)
salt
Mash pinto beans and vegetable oil until beans. Stir in cheese until well mixed. “Frost” meatloaf with bean and cheese mixture.
Place frosted meatloaf into oven and cook for 45 minutes.
