Why do they call red headed folks "gingers" when ginger isn't red?

What group started this tag of “gingers” for red headed folks and when did it start?

I have no idea concerning what group started the name ginger’s but I have five “red” haired friends and they all have ginger colored hair by their own choice of a word when they describe their color of red and I would agree with them.
I suspect it was probably the british who started it, people have been mocked in the UK for decades over being ginger.
In Australia redheads (ginger-haired people) are called Blue as a nickname.
Where does that come from? I haven’t got a clue!
@Andreas That could possibly come from scotland, where they do seem to have a lot of ginger people, and some joke about their skin being blue from the cold. Billy Connoly has a few jokes about it.

I’m going to guess that it’s a mashup of flavor and appearance. Appearance, because the so-called gingers are stereotypically pale – as is the ginger root – and flavor, because ginger is spicy, and ‘spicy’ means ‘red’.

I know. Red hair isn’t really red. Maybe it comes from the color of ginger bread cookies. They’re pretty close to the hair color of a true redhead.
I myself do not. No, far more sensitive. Names like Rusty & Duracell are more “user friendly” I find :¬)
The earliest reference the Oxford English Dictionary has to ginger as a colour is from Richard Huloet’s dictionary of 1552, Abecedarium Anglo-Latinum, in which it refers to the colour of a cockerel. The earliest reference to it in regard to human hair is from Our Mutual Friend by Charles Dickens, published in 1864

@poisonedantidote Quite possibly so. My doctor (Scottish) once said that redhair (ginger) was the curse of the Celts. @Nullo makes an interesting point, too. Maybe the case.
