Any good recipes for a vegetarian christmas stuffing?

Was wondering if anyone had a recipe for vegetarian christmas stuffing , I’m making christmas dinner this year and I would lov eto make a real one, rather than just out of a packet! Not sure how much work is involved though. Any tips?

I sautee mushrooms and onions, add some celery, then Pepperidge Farms herbed bread cubes. Moisten with some water and either white wine or beer. Put in a casserole and bake at 350 degrees for about 40 minutes. If you want to start purely from scratch, you could use slightly stale bread, cube it and add herbs to the cooking pan. Easy.

I brown onion and celery in butter until both are translucent, add water and poultry spice and cook for a little and throw in whatever bread I have handy. Adjust the moisture levels to whatever you like. Bake at 350 for as long as you like. I’m very precise with my cooking.:)

I would dry out some bread (you can include unsweetened corn bread with that if you want a Southern flavor).

Saute diced onions and celery in butter or whatever you use instead. Add the bread. Moisten the mixture with vegetable stock. If your diet permits, add an egg (lightly beaten). Season with fresh sage (cut the leaves with scissors into little strips), fresh thyme leaves, fresh savory, and fresh rosemary or dried poultry seasoning.

Note: you could add some chestnuts (peeled and coarsely chopped) and lose the cornbread for a chestnut stuffing.

Bake at 350 degrees for about 40 minutes.

I make a 3 rice stuffing; wild rice, short grain brown rice, and Wehani rice (a nutty flavored red rice, Lundberg brand, found at health food stores). Saute onions and mushrooms in olive oil, add in peeled, cubed Granny Smith apples, pecan halves and dried cranberries, Mace and Allspice, a splop of Orange Juice, then either stuff your bird, or (to keep it truly vegetarian) put it in a casserole, dot with butter (or margarine) and bake about an hour. My daughter is vegetarian, so I both stuff the turkey, and bake some separately for her. Proportions are all to taste.

You can follow almost any recipe that looks good to you and substitute vegetable stock for chicken stock (or whatever stock it calls for). You can find veg stock in the soup aisle next to all of the other stocks. Most are packaged in cartons now rather than cans. But, it is next to cans.

Consider adding water chestnuts and chestnuts themselves to the basic stuffings mentioned above.

Wow , some lovely sounding stuffings there, thank you! Will have a practise before the big day though and try some of them out! @marinelife I love the soudn of unsweetened corn bread, that sounds so tasty, it’s just a shame we don’t generally get that in the uk! Will keep a look out for it though in the deli etc!

@wenwen Can you get cornmeal? It is easy enough to make your own.

I buy Columbo brand sourdough croutons in the bag, comes with a spice packet then I add goodies:
A few scoops of whole cranberry from a can
Chopped mushrooms
Diced onions
Diced celery
Pecans or pine nuts
Pan roasted chesnuts (cool, peel and quarter)
Cubed artichoke hearts (get the whole hearts jarred/canned in brine)
Grated carrot
Minced fresh parsley
Vegetable broth
Raw eggs to glop it together (optional)

This one sounds good, but I think I would like dried cranberries rather than raisins.

This one sounds really good too. It’s made with cous cous instead of breadcrumbs.

And this sounds great too. It’s made with wild rice, apple cider vinegar and water chestnuts.

I just made this for Thanksgiving day and it was a huge hit! Instead of chicken broth, I used Rapunzel vegan vegetable bouillon cubes (with sea salt & herbs) and I added Ugly Shiitake and King Trumpet mushrooms, and omitted the celery. I also topped it with sliced almonds… ohhh boy! I can’t begin to tell you a. how easy it was and b. how many incredible compliments I got… will definitely make it again! :)
