I sent my birth certificate in with passport paperwork, will they give it back?
I went to the post office to get my passport and brought in my birth certificate. The lady stapled my birth certificate to the paperwork and sent it in. I assumed they’d send it backk with my passport. I received my passport today, but no birth certificate. My mom is all sad because it was the one she’s had since I was born, blah blah blah… How do I get THAT copy back?

It should have come back with the passport. Call the passport office and report it as missing.
This is a good reminder never to let go of original documents.
Yes, it should have come back with the passport, and I agree with @janbb to contact the office. If worse comes to worse, you can easily get a replacement. I ordered extras online a few years ago, at a relatively minor cost.
As per @marinelife—make certified copies of the originals. Do not let go of the originals (or more bureaucratic hassle will be unleashed to get more originals. Until e-gov becomes more widespread and efficient.)
Unfortunately, you should never send originals. You should get it back, but it may be in a separate mailing.
My daughters’ certificates both came back by separate mail. The reason is, that should the envelope get lost in the mail, you will have lost only half of your identification. It’s unlikely that two envelopes will be lost. Theirs came within 5 business days.
You can get another certified copy of your birth certificate from whatever office of records handles such things in your county.
When I send in my old passport and an application for a new one, in early November, the human I spoke to said that my new passport and my old one would arrive separately.

Yes, they only accept originals. I sent my children’s in a year ago, and I believe the birth certificates came back separately. So don’t worry. You’ll get it back.

Most people send in certified copies. Follow up as they may not treat the rare original submitted with the proper protocol. If you lose it, get another certified copy from your hospital of birth.
Recent experience, Yes. Next time order two or three birth certificates, just because. Tony Dahlin Venice
