I recently purchased a Loaded Vanguard (Flex 1) and I’m deciding between two brands of trucks to add to it. I am considering the Seismic 180mm trucks, and the Original S8 200mm trucks. If you have any input, I would greatly appreciate it.

Both trucks should work well for you on a longboard. Trucks are not really as an important component on a longboard as they are on a street/skatepark board. What I would look for is the rubber bushings on your trucks. How much do you weigh? How responsive do you want your board to react when you lean to turn. Softer bushings will make your board turn a lot easier. Harder bushings will give young tighter turn. If you are heavier you might want harder bushings. Get some Bones Swiss bearings and bigger wheels so you can go faster and further with each push. GO SKATE!
