What is a good vegetarian substitute for anchovy dressing in this recipe?

I’m making a cold salad of grains, roasted cauliflower, and kalamata olives. The recipe calls for anchovy vinaigrette dressing. I’m vegetarian and don’t eat fish. What would be a good substitute – is there another kind of vinaigrette I could make that would add similar flavors?

Try some miso.

Miso viniagrette is the perfect choice. Anchovies have that umami flavor and are basically little salt bombs. Miso is succulent and is fermented with salt, so it would do the same job very well.

Vegetarian Worcestershire sauce works well too, if you can find it.

I think a little bit of balsamic vinegar or soy sauce would work well too. Or even some clear mushroom broth might work.

Ohh, just thought that my favorite Tientsin preserved vegetable would work well too. I love that stuff! Almost any Oriental market will carry it.

Thanks! How do I make a miso vinaigrette? do I dilute miso paste with water and then add oil? what proportions?

What about a Greek inspired vinaigrette with red wine vinegar?

A regular viaigrette with some capers thrown in would also give you that salty flavor.
