Can I make the mousse today or should I wait 'til tomorrow?

Having a party Saturday night. I am making chocolate mousse. Would I be better leaving it until tomorrow to make or will it keep fine in the fridge?

It will keep, but you may need to whip it up again tomorrow. Personally, I would wait.

It will taste fine if you make it now, but it will be a bit stiffer and less melting in the mouth come Saturday. The cocoa butter in the chocolate (which is what sets the mousse) solidifies first in a fragile crystal form, which is tender and very meltable in the mouth, but not really strong enough to set the mousse firmly. Over time, those crystals morph through progressively more stable forms. At each step, they become firmer and require more heat to melt.
You want the mousse to undergo one of these morphs, which takes a couple of hours after the mix, otherwise the mousse is too fragile. But after a day or so, it will morph again and the result may be firmer than it should be. Still not bad, by any means, but not optimum.

Mousse is not forgiving. You really need to make it early on Saturday afternoon.

The mousse was made on Saturday and consumed on Saturday night and was quite delicious.
