What's your favorite one-pan meal?
Moving into a new apartment in 2 weeks with my boyfriend and I haven’t had my own kitchen in a while. Even longer than that, I haven’t had anyone to cook for.
I’m looking for tried-and-true, delicious, man-pleasing meals that can be prepared in just one pot/pan/skillet/whatever.

Shepard’s pie made with lamb or cattleman’s pie made with hamburger or sliced steak.
I’m not much of a meat eater, but…once or twice a year I HAVE to have my killer pepper steak sandwiches.
Slice up onions and red, green and orange bell peppers and sautee in a small amount of olive oil. Remove and set aside.
In same large skillet cook thinly sliced round steak or other thin cut beef of choice.
Add grilled peppers and onions and continue cooking til everything is hot.
Drain excess moisture off of meat and veggies and cover with sliced provolone cheese.
Heat again until cheese is melted and divide into portions with a spatula.
Serve on french rolls with lite mayo and salsa if you like, and add sliced avacado too!
Sooo good!
@Coloma: Sounds a little bit like this, which I’ve done more than once and it’s so scrumptious.
Oooh…chili and corn muffins and soup, soup, soup!
Damn it..my bowl of oatmeal and flax meal is NOT cutting it right now!
I like Hamburger Stroganoff.
3 cloves minced garlic
½ large onion, diced
5–6 crimini mushrooms, sliced
1 lb. ground beef
3 Tbsp butter
3 Tbsp flour
2–3 Tbsp. paprika
salt and pepper
½ C half and half
½ C milk
½ C sour cream
Pasta (such as tube shaped or elbow macaroni), cooked
Brown the ground beef and the onions and drain. Set aside.
Add the butter to the pan and the mushrooms and saute until the mushrooms are golden. Add the garlic and cook for 30 seconds. Add back in the ground beef and onions. Salt and pepper. Stir in the flour and cook for a minute.
Sprinkle mixture with the paprika. Add the half and half and milk. Lower the heat to just bubbling and cook until the sauce thickens.
Stir in the cooked pasta and the sour cream. Heat through, but do not boil.
@marinelife: Ooh, that sounds tasty. I make crock-pot stroganoff, using any kind of cheap cut of beef nobody wants, a couple packets of onion soup mix, and beef consomme. After I shred the meat, I either mix flour with sour cream and add that to the liquid, or I just refrigerate it overnight, let it congeal, and then mix in the sour cream and reheat it in a skillet. I find the second way is preferred.
But I’m going to have to try yours now, also. It’ll certainly take less time.
Scrambled eggs with vegetables, and plenty of salt of course.
Barbecued Beef in the crockpot for sandwiches.
Crockpot Chicken Chili
Chili with Pasta
Crockpot Chicken and Dumplings
The following dishes are almost one dish meals (but some of the prep has to be done in another pot or saute pan) I’m not posting the recipes just in case you don’t even want to go to this much trouble, but you can look up anything that sounds good.
Chicken enchiladas suizas
Minestrone Soup (served with a big green salad and garlic bread)
Lasagna
Mushroom and sausage quiche
Chili and Spaghetti
Spaghetti Pie
Mexican Casserole with chorizo
Cheese and chicken and noodle bake
Home made macaroni and cheese with sauteed mushrooms
Chicken pot pie in a casserole (with Bisquick instead of rolling out pie crusts)
Beef Stew
Potato and egg fritata
Potato Leek soup
Turkey tettrazini
Chicken Kiev
My answer now would be different, since I’m vegetarian, but it used to be butterflied chicken hearts sauteed with onions, garlic, red wine, and their own blood. Bacon and ackee was also high on my list.
A thin steak goes in the skillet first then gets topped with:
black pepper
sliced onions
minced cilantro
diced potatoes
a can of salsa (I like Rotel)
a dusting of flour
I cover and slow simmer for about 45 minutes then take out the steak and stir everything else up into a stew consistency. Slice the steak, scoop the stew and make burrito things.
risotto, spanish rice, paella, things of that sort. All the rice, meat and veg cooked together in a big frying pan (or a wok)
If the pan is a Wok and you don’t count cooking rice as a separate pot, this recipe for Chicken with Black Bean Sauce is absolutely delicious and super easy to make.
