What reference source would you use to find the capital of China?

A map, an atlas, an almanac, any encyclopedia, including Wikipedia, your dictionary; there are numerous sources, but I think one of the best references for country information on the internet is the CIA World Factbook

You can leave out the “What is” and it still comes up as the first entry on the page.
Google is your friend. It’s amazing how much stuff can be gleaned on any number of topics :)
I’m guessing this is for a paper of some sort. Would the capital of China really need a reference? I would think that it would be considered common knowledge.
