What kind of pudding should I use for my bread pudding experiment?

OK,This morning I saw this recipe for bread pudding on TV that just set me back. The guy used banana bread for the bread, and some sort of uppity (I’m sure) vanilla pudding. He fanned the slices around in a circular baking dish, and just poured the pudding on top. After it bakes it looks really cool. You can see the feathering in the dish. I can only imagine the taste as heavenly!
I make a kickin’ banana bread so I’m going to try this tomorrow. HOWEVER, I wonder if pudding other than vanilla might be even better….like lemon? Tapioca? What do you guys think?

What about chocolate? Chocolate and banana go together really well :)

Chocolate does sound promising. I could also see using a vanilla pudding spiked with rum. Rum is yummy with banana.

OMG!!! I think you nailed it @thorninmud! How much rum? Think a pint would do it? LOL!
So may CHOICES! What about butterscotch?

Oh yeah! How about baking chocolate chips into the banana bread, then doing a butterscotch pudding spiked with rum?

All of the above varieties sound excellent. I never thought of pudding this way, over a banana bread.

@jca Banana bread baking as we speak! “Bread pudding” always just sounded gross to me. But then Rick made some for me…..and oh man is it good!! I don’t know what his recipe is, but the one I’m using, I pour pudding over banana bread, squish the bread down so it evenly soaks up the pudding, then bake it at 350 for a while. (I didn’t catch how long!) My dilemma at the moment is…I’m using cook-and-serve pudding…so, do I just cook it a little so that it’s still more liquid when I pour it over the bread? I’m thinking so, because it’s going to cook/thicken more in the oven….I’ll let ya’ll know!
