I need some ideas please, for easy, healthy recipes. Websites or your own recipes that you enjoy. Something I can make for a family of 3 with little or no leftovers.

Chicken stir fry. Chop vegetables: onion, red bell pepper, mushrooms, celery, broccoli, zucchini, bean sprouts, for example. You can really use any vegetables you like and you can add a can of Chinese vegetables. Dice the chicken meat. Stir fry in oil. Stir in some soy sauce and serve over rice.
You can substitute ground turkey for the chicken for a type of chop suey.
Another easy meal is pasta prima vera. You can add any cooked meat you like such as chicken or salmon or shrimp. Add some chopped vegetables such as tomatoes, green beans, onion, mushrooms, zucchini, fresh basil. Stir in a little cream at the end and some grated parmesan cheese and the pasta.
Here’s a few of my faves:
Cold Soba Noodle Salad with peanut butter dressing I usually make it with broccoli instead of asparagus, and I used Trader Joe’s seasoned baked tofu like this
And Raw Kale Salad with Root Vegetables I’ve made it with beets, turnips and rutabags and carrots, any root veggies that you like will work. It’s easy and yummy and super-super healthy.
Vegetarian Chili
Hummus is really good and you can change it up in quite a few ways. Check out some easy recipes for hummus here Then you can put load the hummus into whole wheat pita bread halves with lettuce, tomato and some kalamata olives.

I would suggest picking up a copy and browsing. I have not gone wrong by any of their recipes.
The website is also great and you can search by your needs and also create a recipe account to remember or add your own recipe for filing.

Sunset magazine always has good, easy recipes too, and lately they’ve been adding “meatless” recipes each month.
Vegetarian Times is really great for super-healthy recipes with varying degrees of simplicity to more complicated. Each of these mags has an online version too.
Now I’m hungry again!
