What's a good lubricant for pancakes?

Also, what’s the best thing to put on a cooking surface, so that yer flapjacks don’t stick to the griddle? ;-)

oil?
you can also try butter, or margerine

I use Pam. Usually works for 4 or 5 waffles.

I prefer syrup. Makes ‘em slide down the throat effortlessly.

I saw pancake lubricant and my first thought was maple syrup. But for the grill a mix of oil and butter would give the most flavor plus have a good browning point.

I used butter every time before yesterday morning, and every time it got smoky. So I tried just coating the pan with vegetable oil (which I NEVER use for cooking) and it worked perfectly. I had to add a little more in between pancakes.

@deni It’s likely you were cooking them over too high a heat. Butter and olive oil have lower burning points compared to things like sunflower and safflower oil. You can use a higher flame with those vegetable oils (but not all vegetable oils).

Make your pancakes in a cast iron pan and you don’t have to worry about sticking or lubrication. (Assuming you take care of your pan and it’s well-seasoned.) I really don’t understand why more people don’t use cast iron pans. They’re not expensive, assuming you don’t insist on Le Creuset!

As for lubrication on the plate, for me there’s only one acceptable kind: real maple syrup.

Most pancake recipes have oil or melted butter as one of the ingredients. Therefore they should not stick. Adding more oil to the pan and using high heat creates a smoky mess. Maybe it’s a non-stick pan causing the problem. Non-stick pans shouldn’t be used at the high temperature pan cakes need. My non stick pans have long ago lost that non-stick quality, so it doesn’t matter anymore. I agree with @nicobanks that cast iron pans, properly seasoned, are great.

For eating, salted butter and maple syrup. However, blueberry pancakes require sour cream.

For your griddle, canola oil is ideal. No burning and no flavor that will interfere with the taste of the pancakes.

Has anyone here ever had “apple pancakes.” Here’s the recipe. Slice about one to two apples in relatively thin small segments and add to normal pancake batter….Instead of syrup, sprinkle lightly with sugar…mmm.

Personally I use olive oil, but to each there own.
