Lockdown isn’t a documentary, but a series where they take you inside of multiple prisons and give you a feel for the different nuances within each.
Louis Theroux is the man for documentaries in strange places!
Here is his ‘Louis Theroux, Behind Bars’ in which he visits and talks with prisoners from San Quentin.

National Geographic has a bunch of documentaries about prison life and prison gangs, even about solitary confinement. As far as I know, most or all of them are available on instant on Netflix.
As @seekingwolf said, there are heaps of docos about prison life in the US on Foxtel (cable I think you call it).
Aleksandr Solzhenitsen wrote an amazing book about it.
Locked up! I love that show, it’s on msnbc I think, but i know netflix has it.
They also have Locked up abroad.

60 Days in, this series puts 7–10 volunteers in a prison as undercover inmates. The first season is great but I’d skip to the Atlanta series, that where it really gets intense and interesting
