Will parrallel kindom work on the iPod touch not just the iPhone?

Yes, provided it’s either a) new or b) you pay for the OS 2.0 upgrade so you get the App Store. I’m assuming you’re meaning they will make an official release, I’ve not heard much about their plans. If not, then jail breaking will work.
