I am going to be baking oatmeal cookies very soon (today). How can I make them less thin and crisp and more chewy and cake-like?

Make sure that your mixture is moist and not very dry. Try not to make them too thin when your putting them in the oven either.
If you’re adding butter, they will be crispier, whereas using shortening makes them more cakelike.
A little less butter (though I don’t care for shortening), a little less sugar. The firmer the butter while you’re working with it, the better.
Find an Oatmeal molasses cookie recipe. They should come out moist and chewy.
Use bread flour instead of AP flour and melt the butter, find a recipe with added milk. Process the oats.
Use half the butter that the recipe calls for. More butter = thinner and crispier.
More baking powder. Baking powder makes them puffier, will rise more. More egg also would make them more cake like.
