Has anyone ever roasted pork in lard?
I am thinking of making a pork confit. I was wondering if anyone had tried it and what you thought of it and what your favorite recipe for it was.

I’m sorry that nobody has answered this, because that sounds delicious. If you make it, you should post here and let everyone know how it turned out!
A pork confit is very very fatty and it is tasty, if you like that much fat. Pork (shoulder) is very fatty all by itself. I personally would prefer the same seasonings with a pork shoulder roast, but that’s because I’m kind of repulsed by that much fat. It’s like eating a stick of butter or six except it is pork fat. That said, I applaud people for trying new things in the kitchen. Try Julia Child or Jacques Pepin for a recipe.
Pork fat rules. I’m sorry I don’t have any advice to give, but definitely let us know how it turns out!
I render lard myself and use it in cooking, but haven’t made that particular recipe. If you get the lard from an animal that had a good diet, it’s actually fairly healthy.
