How do you make really good gluten free cupcakes?

My boss has celiac’s disease and I have to bake gluten free for the office. My cupcakes always end up feeling too dense when I use rice flour or other substitutes.

my friend uses ground up chickpeas for the base. they are dense, but creamy.

chickpea flour has a strong taste. You might do better with rice flour. It’s a 1:1 exchange and a bit more neutral. Also the texture will be a little more like “normal”.

Cup 4 cup is a good flour substitute. If your boss has celiac disease you hav to use a new cupcake pan and don’t use your mixer to make the cupcakes. Cross contamination can get him sick from kitchen equipment, even after it’s been washed.
