What is your favorite chicken curry recipe?

We are having a little get together and I have decided to make it a chicken night. All must come dressed as their favorite chicken, that should be interesting, and the refreshments are going to be all chicken based. We are having Buffalo Wings, Chicken Caccitore, a home made Chicken Pie and I thought perhaps a curry. Just wondered if anyone had a favorite curry recipe???

One I really enjoy is Cocunut Chicken Curry. You pretty much can use whatever you want. The main ingredients are coconut cream, cubed chicken, and curry powder. You can pick and choose whatever veggies or other additives you want. I sometimes like red thai chilis, water chestnuts, snowpeas, slivered almonds, and boiled potato cubes!

ya it’s very simple and you really don’t have to worry about overcooking it, as soon as it’s done, if people aren’t ready just, just throw it on a low setting and it will only taste better and better! Feel free to experiment. That is the beauty of cooking!
Another little hint is the first time you try it, you can either use coconut milk or coconut cream. I tried the milk the first few times and it was delicious, but it was more of a runny curry. I found with the coconut cream, the curry becomes more dense and easier to eat. Also less messy!
You obviously are not worried about the calories! But I agree, always thicker and creamier with coconut cream instead of the milk.
I’m sorry to say curry doesn’t agree with me, would definitely be a case of cock a poodle poo for this fella :¬(
@ucme – Welllllllll I am sorry to hear that, but lurve to you anyhow. Actually my big Red akita was a garbage gut, he could and did eat anything he could find with no bad results. Unless it was curry, one small taste of curry would put his digestive system in an uproar! I learned that the hard way (I am sure it was no picnic for him either!)
@rooeytoo Yeah, my dawg will literally eat anything, apart from grapes, which is a little odd.
what about the tribe in Africa that only has grape eating dogs?
That’s true, raisins are not a good thing, nor is chocolate or macadamias! Poor pups, they don’t know what they are missing!

That’s true, you never know.
you would think however, with all the interbreeding and genetic manipulations, that there would be some dogs who could digest those things in a healthy manner….

Here is my chicken curry recipe:
1 large onion, very thinly sliced in rings
1 large red bell pepper, very thinly sliced in rings
½ lb of sliced mushrooms (I like crimini.)
2–3 cups, cooked, cubed chicken
salt
pepper
2–3 Tbs curry powder
2–3 Tbsp. Flour
2–3 Tbsp. Butter
1½–2 C chicken broth and, mixed
Saute the onion and bell pepper in the butter until soft. Add the mushrooms and saute until golden. Stir in the chicken and flour. Add the curry powder. Cook for a couple of minutes, stirring.
Add the liquid and simmer until thickened.
Serve over rice.
Possible accompaniments (served in little dishes around the main dish):
Mango chutney
Chopped cashews
(unsweetened) flaked coconut
Golden raisins
I like a cold Curry Chicken Salad. Light mayo, curry powder, halved red grapes, cubed chicken, scallions, salt, pepper… I think that’s everything. Serve on pita. (You can also probably substitute some Greek yogurt for some of the mayo, too).

Ingredients
½ cup chopped onion
1 medium sweet red pepper, julienned
2 teaspoons vegetable oil
1½ pounds skinless, boneless chicken breast halves – cut into thin strips
1 tablespoon curry powder
2 teaspoons minced fresh gingerroot
1 teaspoon minced garlic
½ teaspoon salt
1/8 teaspoon cayenne pepper
1 cup chopped peeled mango
¾ cup coconut milk
2 tablespoons tomato paste
Hot cooked rice
Directions
In a large skillet, saute onion and red pepper in oil for 2–4 minutes or until crisp-tender. Add the chicken, curry, ginger, garlic, salt and cayenne. Cook and stir for 5 minutes. Stir in the mango, coconut milk and tomato paste; bring to a boil. Reduce heat; cover and simmer for 10 minutes or until chicken is no longer pink. Serve with rice if desired.
@marinelife for some reason, I read “serve over ice” and I’ve been reading over your recipe again and again, trying to come up with an reason ice would be involved…..lol
