Do you have any seriously, deliciously good carrot recipes, something different perhaps?

I’m looking for really delicious recipes for a vegetable we all know and perhaps take a little for granted, something to awaken the culinary imagination, savoury recipes especially but open to all suggestions…

Take a peeler, and widdle the carrot till you get a nice big pile of carrot shavings. Mix it with an equal amount of alfalfa sprouts (or other sprouts of your choosing). Add a handfull of pre-shelled sunflower seeds. Toss with your choice of salad dressing. I usually just use olive oil and vinegar.

I like caramelized carrots. I sauté on low heat baby carrots (quartered “adult” carrots work also) in a nice helping of butter (2–3 pats), maybe a tablespoon of brown sugar, and then I add in little pinches and dashes of nutmeg, cinnamon, and cardamom to taste (mostly depends on my mood). I’ve even added in a teeny bit of paprika, which is delicious, but also different from what I’m going for sometimes. And then you just keep stirring it every 5 minutes or so on low heat (I think I cover it for most of the time, but I can’t remember) until they’re fork tender, like in a pot roast.

No, but I don’t have any seriously, deliciously good questions to answer, it seems, so I am answering this one, even though my answer, sadly, is no. But I am enjoying and looking forward to everyone else’s good carrot recipes. Hi, mods, I know “unhelpful.”

It would take a lot of persuasion for me to believe that any way of cooking a carrot could possibly be better than just eating it raw, crisp and sweet and full of earthy flavor. So I’m going to follow this one.

I like them sauteed in butter with a sprinkle of salt, a squeeze of lemon and a bit of chopped parsley. Cook them until they are just tender but not mushy.

I have a lacto-fermented recipe that I’ve been wanting to try that is principally made from carrots. Kinda like a sauerkraut but carrots instead of the cabbage, and therefore sweeter. I’ll see about putting the recipe up when I get home (if my netbook wants to work).

Here are a few of my favorite things (carrot wise) and some things that popped into my head, that I haven’t even tried or heard of that sounded good. Hopefully you can find something on this list to suit your fancy : )

Carrot Halwa is an East Indian dessert that is not too sweet. It features my favorite spice, Cardamom and is one of my favorite dishes of all time, dessert or otherwise. Some recipes call for rosewater, which also pushes it into the sublime. This one is pretty easy to make.

This Spicy Savory Carrot Dip sounds enticing.

Carrot Chutney Recipe One I love carrot chutney. This one is green with the addition of cilantro. Sounds relatively easy to make compared to some othe other recipes I’ve read.

Carrot Chutney Recipe Two This one is more the color that I’ve seen before and has coconut (make sure to use unsweetened coconut).

Two Kinds of Carrot Ginger Soup There are 2 recipes here. One is the basic recipe and the second one is a much spicier version, with additions. Both sound great. This is a vegan recipe, but you can use regular milk and/or chicken broth if you prefer.

Curried Carrot Soup

Roasted Carrots, Parsnips and Radish Chips These look amazing and can be used to garnish other dishes.

Carrot Pie Something similar to pumpkin pie that I never even thought of. Love the “crust” carrots in the photo.

Pickled Carrots These are just like the yummy hot carrots that they serve in the salsa bar at many Mexican restaurants.

Carrot Cauliflower Soup with Sesame Yogurt Cream This sounds divine, almost off the charts!

Moroccan Carrot Salad

Carrot, Orange and Mint Salad

Chocolate Orange Carrot Cake Even I’ve never heard of this, but it sounds fantastic. Sometimes I start combining google entries and this is what pops up. Yum!

Avocado Salad with Carrot Miso Dressing

Roasted Carrot Hummus

Carrot Ricotta Ravioli

Fresh Spring Rolls with spicy Tofu, Cabbage and Carrots

I don’t know the exact recipe, but my dad makes a baked turnip and carrot mash that is sweet and delicious. A hint of brown sugar brings out the sweetness in both the turnip and carrot.

I also love carrots done in the way that @Aethelflaed described, again with a little brown sugar, cinnamon and maybe some nutmeg.

I like the Curried Carrots from The Silver Palate. Cook carrots. Stir in butter, a tiny bit of sugar and curry powder.

Half and half orange and carrot juice, with a dollop of ginger.
Or if you can’t be arsed, mix orange juice with ginger ale and eat a carrot. It’s all good.

To me, everything tastes better roasted! It brings out the natural sugars. I have been meaning to try this recipe from Ina Garten aka The Barefoot Contessa. I think I’ll try it tonight. It seems good and easy. thank God I have air conditioning though!
