What goes with carrot ginger soup, or what else could I do with all these carrots?

I have a ton of carrots from my garden that I need to cook in the next couple days. I was thinking about making carrot ginger soup out of them, but that doesn’t seem like a meal. What could I serve with it? Or should I do something else with the carrots altogether?

Carrot cake is very good. Have the soup with a big dessert after.

Puree the carrots and make up freezer safe baggies of the stuff you can stack away and then use later in your cooking. Cakes, marinara sauces, soups, casseroles, breads, stuffed dumplings, etc.

You have come to the right place, there was a thread from a few days ago that gave a whole bunch of carrot recipes

If you want to make the soup, which is kind of Asian-inspired, I might make a cold noodle salad to go with it. Something like this one.

Gotta run out the door. I will re-visit this question later today : )

Carrot ginger soup with go well with some crusty, toothy bread and cheddar cheese and a green salad.

Carrot cake is certainly another great use for them.

You can pickle some: julienne a bunch cook over gentle heat in apple cider vinegar with a bay leaf, salt and pepper… works as a relish on its own or a sandwich filler

Try making a soup with carrot and coconut milk with a pinch of curry powder, cumin and turmeric.. Very high in anti-oxidants and good for you

You can also steam julienned carrots till tender and dress as a salad with currants/golden raisins, julienned fresh cucumbers and turnips for crunch and some ranch dressing.

My mom also used to make simple broth – boil a bunch of pork neck bones with a whole load of chopped or whole carrots and let it cook for an hour or 2. We’d either have it straight like that or she’d blend the carrots with some sour cream to make a creamy carrot soup and serve it with the boiled pork meat shredded up on top. Very simple and satisfying

Hi I came back.

If you still plan to make the soup and you want to serve something else with it, I was thinking of something like an afternoon tea type of meal. So I would serve several (3 is plenty) different sandwiches (cut into small pieces) with it.

Such as watercress sandwiches

And chicken salad sandwiches (although I would put these on pumpernickel)

And curried egg salad sanwiches

Or these onion sandwiches

Or pepper cheese sandwiches

Or smoked salmon sandwiches

Or tomato tea sanwiches

Or pineapple cream cheese sandwiches

If you like the idea of these afternoon tea sandwiches with you soup, you also might want to add a Waldorf salad with tart cherries, grapes and candied pecans

And a butter lettuce salad with citrus Parmesan dressing

Or if you liked my Asian-inspired noodle salad (with either tofu or chicken) from my first post above, you could also add an Asian Slaw or some Fresh Spring Rolls with Shrimp or Fresh Vegetarian Spring Rolls

Or if you prefer a more mediteranean style meal, you could make Chicken, spinach and artichoke lasagna in a lemon bechamel sauce

Or mushroom ravioli with walnut bechamel sauce

Or pasta primavera in white wine sauce

Add a bibb lettuce salad and Voila!

I would sautee and freeze them in baggies, kind of like what @Neizvestnaya suggested.

Making escabeche (spicy Mexican-style pickles) would be good, too, especially if you know how to can foods. Here’s a recpe that looks good to me: http://spiciefoodie.blogspot.com/2010/08/zanahorias-en-escabeche-or-mexican.html.

Also, I’ve heard that carrots dehydrate well. You can save them to use later in soup or something, or you can even eat them like chips.
