What's the most creative thing you've ever cooked late at night?

There’s something about late-night food that is different from everyday food. Suddenly it becomes ok to put bacon, eggs, and avocados on a hot dog or to make a grilled cheese sandwich with more than 10 ingredients. There are some ancient fries in my freezer, hamburger meat, jalapenos, cheddar, and sriracha sauce, and I’m thinking of turning it all into chili cheese fries. How do you satisfy your late-night munchies?

Bacon, dove breasts, stir fried with crushed ramen noodles, served in a burrito shell with feta cheese, wasabe, lettuce, onion, sour cream and extra hot picante sauce.
I’m a really awful cook to begin with but one night I decided to make the only thing I know how to make (sandwiches) but to put everything on it. I made egg whites and threw those on, avocado, tofurkey, tomatoes, and spicy mustard. Then instead of using two slices of bread, I just folded the one in half in an attempt at making a wrap out of my sandwich and disaster ensued.
I think I’m fooling myself by calling this ‘creative’ instead of just poorly thought out.
Well, does putting nutella, red lolly frogs, M & M’s, peanut butter, caramel, chocolate, strawberry flavouring, custard, mentos on ice-cream count?
Surprisingly it all tasted nice together.
Stir fried rice. It is now a staple for 1 am cooking.
I used to make scrambled eggs with muenster cheese, when I was young and used to get home at 4:00 a.m, sometimes after drinking (in fact, usually after drinking). It was really good.
Oatmeal. I don’t do late night cooking very well.
