What's the best chocolate to bake with?

I like to bake with a combination of semi sweet and bittersweet chocolate . My favorite brand is Ghiradelli.

I mostly use either the premium supermarket brand (Tesco finest ) or a local chocolate brand – in either case we’re talking solid chocolate with approx. 60–70% cocoa.

Callebaut is really good.
Valrhona has never let me down.
From what I’ve read/heard Valrhona seems to be preferred by professionals.
