Does anyone have a good recipe for vegetarian tacos or enchiladas?
I’m thinking of trying them with sweet corn, but not coming across much info on this. Got any suggestions?

One of my all-time favorite dishes at a Mexican restaurant that I used to go to way back when was their cheese and onion enchiladas. Delicious.

Here is something to try.I hate to answer your question empty handed.
I like roasted veggies like zucchini, eggplant, orange peppers and a mild white cheese on either flour or corn tortillas, everything hot, cheese melted. You can fry it like a quesadilla, or just put it in a toaster oven open face, and then fold it over.
Mushroom, onions, cheese.
Black beans, avocado, onion, tomato.
Retried beans, rice, lettuce, cheese, tomato.
I don’t have a recipe, but I do love to cook up beans (whatever I have in the cupboard, usually kidney or black) and rice with a bit of taco seasoning and cayenne, then stuff the mixture into taco shells with sweet corn, black olives, lettuce and a little bit of sour cream.
My husband thinks it is gross, so I’m not sure that I should actually be sharing this concoction… but I love it. haha.
Roasted potatoes and chiles (along with beans, if you wish) are fantastic in a corn tortilla. You can eat this as a taco or roll it/top it with cheese and a sauce of your choosing if you desire an enchilada. And migas (egg concoction)—migas enchildas top the list of my favorite foods. I would cook some for you (and me) now, if I could.
All of these food questions are killing me. I’m starving.
@Jude I should have waited and asked this later. All the answers are driving me nuts. We’re leaving early because of the flooding. I’ll get some snacks then.
I’m a fan of cheese & onion only enchiladas. I’ve found if you slightly toast the corn tortilla in vegie oil before coating it with enchilada sauce then it has a different flavor. Also, the kind of chili powder you pick for the E sauce is a big deal. I favor New Mexico chili powder over Caliornia chili powder or the scary stuff in the cardboard can at supermarket (has an indian in headress on it).
