What's your best healthy egg roll recipe?
It’s difficult to get the pork cured just right, and I’m that serious about it.
So from start to finish, with the only shortcuts being maybe the wontons are premade, how do you roll?

Well, I had a Vietnamese woman show me how to make chicken egg rolls. The only thing I really remember is that she used raw chicken. She said, “You Americans always cook your meat twice! The chicken will cook when you fry the egg roll!” I never made the egg rolls, but that perfectly logical observation changed the way I cook some dishes anyway.
Do you ever make burritos? You roll egg rolls the same way. Tuck the ends in and just roll them up tight. It takes a little practice.
I like to fry the wonton and then put the contents on the flat instead of stuffed inside. I pan fry the wonton in very light olive oil.

I haven’t tried this yet, but here is a recipe for Baked Eggrolls. It sounds like a great idea, to avoid the step of frying them. This recipe is vegetarian.
