In leu of baskets, each of you can look in your fridge. Each dinner must include at least 3 left over items, one vegetable, and one starch, and one protein (vegetarians can substitute another veggie of their choice).
For me:
Left over venison meatloaf
¾ cup of spagetti sauce
½ cup fried rice
Basmati from a left over indian dinner.
Found 4 tortillas and a chunk of monetary jack cheese hiding in the deli tray. Grated cheese. Sprayed a small casserole dish with non-stick spray. Spooned a bit of sauce on each tortilla. Added Grated cheese and left over meatloaf to each, rolled burrito style and placed in casserole. Added cayenne pepper and cilantro to the sauce to spice it up. Poured sauce over the top of the burritos and topped with a few diced onions (also left over) and remaining cheese. Slapped in a 350 oven to bake until goozy.
Mixed left over basmati rice with fried rice and nuked to heat. Sliced an Avocado found in the crisper and artfully arranged on top.
Grabbed a hand full of “spring mix” salad to finish the plate and put a few cherry tomatoes and drizzled my favorite calamata feta dressing over the top.
I’m calling them “El Bobbs”.
(all done while enjoying a margarita after a day of “bringing home the bacon)
Total prep time including the margarita… around 20 minutes not including the baking, which will be done while I finish the rita and fluther awhile.
So… what are you doing with the “mandatory ingredients”?

WoW… I didn’t have lunch nor dinner and now I’m hungry as fuck. I got lost when I was reading what you’re cooking because making scrambled eggs is the only thing I know. So for me? Scrambled eggs with toasted slice and sliced cheese it is! Simple, fancy, delicious.
@Tbag – I love scrambled cheese eggs!
We don’t have any leftover prepared meals but I do have the following ingredients on hand:
Corn tortillas
Eggs
Cheddar cheese
Rotel salsa
These will be made into Llevos Rancheros.
It would have to be rabbit fajitas.
Leftover rabbit
leftover peppers
leftover corn flour to make the tortillas
Salsa
Cheese.
Unfortunately I’m on my last day of house sitting, so I’ve eaten almost everything that I brought with me.
I have one frozen French bread pizza, onto which I will probably put the last of my broccoli florets and the single mushroom that I still have. That will be paired with a bowl full of in-shell peanuts that I will heat up in the microwave (makes ‘em just like you got them at the circus) and then for dessert, I will put the last dollop of ⅓ less fat Philadelphia cream cheese onto my last tortilla with a spoonful of orange marmalade for dessert.
If I was at home, this would be a whole different ball game with roasted squash, heirloom tomatoes plucked off my plant, drizzled with balsamic vinegar, garlic toast and some Greek yogurt with berries for dessert.
The ingredients:
Leftover rare grilled london broil
baby spinach/onions/garlic/mushrooms
bacon
couscous
chop 2 slices bacon and brown in a pan with onion, garlic and mushrooms – throw in the spinach, just to wilt
cook the couscous in chicken broth and add juice of ½ lemon
slice the meat against the grain and lay on top of the greens
serve with couscous
