How can you present a successful case against a Full Stop court appearance?
I know that it’s up to the police officer to have proven that the offender is guilty, how would one defend himself against the accusation of a non full stop at a stop sign?

Did you stop or not? If yes, it’s your word against his. If you didn’t, then he’s correct. Is there a sense of a corrupt police department in your town or in the area where you stopped (or didn’t, as the case may be).
Here, the police are polite and to-the-point and simply announce what they have clocked on their radar or witnessed. I have never been stopped for an imaginary infraction.

Dear commissioner/judge, I was pulled over for a supposed stop sign flagrancy. I believe I made the full stop, I believe the police officer had poor judgement. I’d like to see his video that proves that I did not fully stop. Furthermore I feel the officer seemed fishy as he questioned a lot of things about me, which suggest he was just trying to get lucky with me, perhaps because I wear a full grown beard and am young. He asked if I had a rifle, in my guitar back, because it matched the size of one, I found that too be quiet a fishy question. Also he was defending why he pulled me over and said that he had been assigned duty in that region because a child was run over 3 weeks prior to the pull over. I’d like to see evidence regarding that issue. Furthermore, your honor, I don’t believe the police division in the South East region lead by example, for instance they do not signal left or right from what I have been observing in the past 4 years. So it’s hard to trust his word since he also told me that I could get my proof of registration written off by another officer. This was faulty information because I went to the South Eastern division police department and the officer at the desk told me the police man was incorrect in telling me it was able to be written off. I cannot trust this cops word and I believe I fully stopped.
That’s an example argument I made, do you think it would work? I already pleaded guilty but for future references I plan to challenge things more since I’ll have my career by then with more time perhaps to reschedule.

Go to court and plead your case to the judge (In far fewer words, of course).
Ask what are legitimate questions for the officer to pose, in addition to “license and registration, please.
Do not, I repeat, do not start attacking the entire police division of the SE region (wherever that is) by what you have seen over the past four years.
I do not understand the details about the proof of registration? Did you have yours in the car?
Cool and calm, address only the issues pertaining to your case, and ask the judge what would happen if, in good faith, you pleaded “Not guilty”?

And don’t use the term “cop”. It’s “officer”. Anything less, in their eyes is disrespect.
The weight of truth is generally given to the police officer. Proving you were right and he was wrong is almost impossible, without proof or a witness.
When the situation appears to be at a tie in court, the judge usually relys on a persons previous traffic record, in order to make a judgement.
If your past driving history is loaded with violations, just plead guilty and forget it.
You submit evidence that you stopped. A photograph or video would be best.
Too late for that. It’s hard to record one’s driving experience in live time unless you have a troop of paparazzi filming your every move (or stop)>
