What is happening with my cinnamon?

I have noticed that sometimes when I cook cinnamon in water and sugar it goes very sludgey around boiling point and other times it doesn’t. I have been using different sources of cinnamon, but I swear sometimes it sludges and sometimes it doesn’t. Does anyone know what cinnamon is doing what?

I’ve noticed that cinnamon can be difficult. It doesn’t really dissolve. I’d try making the syrup (water and sugar) first. Let it cool. Then whisk the cinnamon in.

It doesn’t dissolve because it’s ground up tree bark. No surprise there.
If you want the best quality (and many times less expensive than at the supermarket) try Penzey’s.
They also have retail outlets and if you’re lucky you may find one within driving distance. I had been ordering from them for years over Internet and was delighted when I found one near me.
I don’t know for certain if your sludge issue is related to lower quality but it’s a possibility.

You gould use cinnamon oil too but it only takes a drop and it is really expensive buy comparison. If you’re interested, PM me and I’mm send you a link. I don’t want to spam up the thread.
Does cinnamon oil add the same flavour as cinnamon powder?
yes. Just way more concentrated.
