Does anyone have a good recipe for Bailey's Irish cream (see details)

Asked by JilltheTooth (19792points) December 6th, 2011

I want to make my own this year and I would love it if anyone has tried and true recipes. Please don’t just link to recipes unless you have used or tasted them yourself. I can Google recipes, I want ones that people have actually made or tasted…

A traditional College recipe is to drizzle Baileys into Cinnamon Schnapps so that it resembles a tiny brain floating in the red Schnapps. It’s called a ‘bloody brain’ Typically taken in one tug, it feels almost like swallowing an oyster. It’s generally a fun drink that starts stuff off.

Let me rephrase, I guess I wasn’t clear. I want to make the Irish Cream, not make things with Irish Cream.

@JilltheTooth We used to make big batches of kahlua for our white russians we served at our fraternity parties. I could probably adjust that recipe to make an Irish cream if you don’t get any other ideas.

@Adirondackwannabe I’m curious about the kahlua recipe if it doesn’t derail Jill’s question.

No, it won’t derail! I love all the boozy conversation!
Bring on all the fun liqueur recipes!

Okay, just remember I was in the fraternity and we used to drink a little. We used instant coffee and reduced it down by about half, then we added sugar and vanilla extract until we liked the taste. We let it cool and then added vodka to bring it back to where it was still thicker than regular coffee. Serve with cream or milk.

@janbb It would be good with better quality ingredients, but we were stupid college kids and didn’t know what good meant.

janbb's avatar

@Adirondackwannabe Wouldn’t you like those days back?

Adirondackwannabe's avatar

@janbb Yes and no. We had a helluva a lot of fun. But I’m much more peaceful and wiser now.
@JilltheTooth So I don’t totally derail your thread. I think almond extract and maybe some Bushmills would go good in the Irish cream.

Like I said, no derailing going on. I should have asked a “General Liqueur Recipe” Q. Anyone got a Cranberry Liqueur recipe???

Irish Cream Liqueur

Ingredients:
1-bottle whiskey (preferrably Irish whiskey)
8oz-Milk chocolate
2—(14oz) cans sweetened condensed milk
3-cups heavy cream
1-tsp. instant coffee granules
1-tsp. vanilla extract
½-tsp. almond extract

Pour 1 cup whiskey in a large bowl.
Melt chocolate in top of double boiler or microwave. Stir until smooth.
Combine melted chocolate with whiskey in the bowl. Mix until well blended.
Gradually stir in sweetened condensed milk.
Stir in heavy cream, instant coffee, and extracts.

Pour mixture into 3 (750ml) bottles; tightly seal and store in refrigerator. Best if stored 2 weeks to 1 month before using. (Yeah. Right)
Shake bottle well before serving.

This is my go-to recipe for making my own Baily’s Irish Cream.

(Then, once you’ve made it with @AmWiser‘s fab recipe, use it to make the most delicious bread & butter pudding, and I’ll make the trip over to share it with you! :-)
