How might I add my work email (MS Outlook) to my iPhone?

I tried, and I got through entering my info, but I think the part where I had to enter the server stumped me; I couldn’t find the info in Outlook.

Now, I don’t even remember how I got that far. I could probably find it again, but how do I find out what server I should be logging into?

This will more than likely be a different server setting that what your Outlook shows. It will vary depending on what they having running in the backend hosting your mail. Even if it is Exchange, different versions of Exchange have different roles.
Contact your IT department and ask them for the configuration settings for syncing your email to your iPhone.
