Setting up Gmail IMAP?

Can anyone provide tips and finer points of setting up GMail via IMAP on Outlook 2003 or 2007?

yes. I’m interested in figuring out how the folder mappings can be done (other than sent items) and how mail can be moved to a local folder and deleted off gmail rather than archived.
