Consider having a jeweler make a ring to your design.
What have you done untill now, to find a suitable one for him?
Does he has preferences for materials, certain designs, etc.?
Does he want to wear a ring?
If you hadn’t before, visit a jeweler and ask for advice, or have a browse around online jewelers, just to get an idea on prices, designs, possibilites, etc.
A few of my friends, who work in industries where they needed a stronger metal (like carpenter’s for instance) for their rings so they wouldn’t get damaged opted for titanium. I think you can also get rings made of stainless steel.
I second the notion of getting a jewelry artist to help you to design your own ring. You can also look in antique stores (if your fiance doesn’t mind a used ring. For me that would be the best option because I love the idea of choosing a ring that already had a history, plus I like the look of the delicately carved older rings from the early 1900’s).
Another option is to take some rings or other jewelry and have them “re-purposed” into what your fiance would like.
Find out what kinds of metals he does like and whether he likes a more minimalist look or whether he prefers something more ornate, or something more artistic in design. Then you can figure it out by process of elimination.
Here is some info on choosing an appropriate men’s wedding band.
Get with him and google stainless steel, platinum and titanium wedding bands. There are tons of them to choose from. The better ones will have what is referred to as “comfort bands” which means the inside of the band is rounded slightly and is good for people who like to wear their rings round the clock or who work with their hands a lot.
Is he rejecting the ones you have considered, or are you trying to find a ring and surprise him with it. If it is the latter, I think you should consider letting him pick his ring. Unless you both are the type of people who love anything the other picks, and will love it and wear it.
Men’s rings in the US (not sure where you are) come in all sorts of different metals.
Can you describe to us the kind of ring he wants? Interesting pattern? More traditional? Shiny metal? Matte? Dark metal?
