Is there a cool/aesthetically pleasing way to display your Pez dispensers (without looking like a dorky collector)

I have a bag full of older ones. Should I keep them in the bag and store them away?

Turn them into art. How you do that is up to you. But think of the display as a work of art and use your creativity, and you should be able to do something that won’t look dorky.
Make a table with them, covered with glass. There is no real way not to look like a dorky collector. There’s nothing wrong with that – I know someone that did this with their matchbox cars and it looked cool.

Hanging them on the wall like this is a very minimalistic but pop-artsy way of displaying them, and it would be fairly simple.
You could also go with simple shadow boxes which would help to incorporate the dispensers in a more contemporary or traditional home.
Another option which would have a more subtle but still noticeable effect is to intersperse the Pez dispensers with books and other objects/trinkets on a bookshelf, similarly to the way the objects on these bookshelves have been arranged. This would also work well on any wall shelf, desk, or side table.
I like the wall hanging idea. I would put them in ROYGBIV order. That pattern always looks good.
If you enjoy seeing them, display them. My niece and her husband both collect all kinds of stuff. I love to visit and look at their latest enthusiastic collection. If asked if they were dorky, I’m pretty sure they’d say yes. If being accused of that would make you uncomfortable don’t display them.
You could try and craft them into one massive pez dispenser.
I have a pretty large collection of Pez dispensers including rare vintage ones worth up to $500. I display them in black shadow boxes.
Either wrap them up safely and put them away carefully, or sell them on eBay. They’re probably worth a shitload of buckazoids.
If they’re not worth that much, I’d hang them up like @Fly suggested.
If they’re more valuable, I’d make a letterpress drawer type of storage for them. You could just hang that up on a wall. But it would look extra cool as a desktop. You can find some cool vintage table legs on eBay. Or just scour some garage sales.
