Dish with shrimp and vegetables: anyone know what this is?

My son asked about me making a dish containing diced (?) shrimp, diced vegetables and fried. It might have been fried in a wrapper.

Any ideas what this is called so I can find a recipe?

I don’t think this is what you want, but I sometimes make egg foo yung with diced shrimp, oriental vegetables, fresh chinese noodles and beaten egg.

Is he asking about egg rolls?

I picture this:

Throw diced (cooked) shrimp (or pork or chicken or beef or tofu) and a bunch of diced vegetables in a hot pan with a little oil.

Pick your favorite vegetables. Mine would be spinach, tomatoes, asparagus and zucchini.

Serve over rice. Or, if you want a wrapper, heat flour tortillas in a separate pan.

Any idea what ethnicity the dish is?

He called it “scampi” which is Italian for shrimp and generally means shrimp sauteed in garlic.
I have to press him where he saw it or had it.

Scampi has no wrappers involved. Maybe it’s a wrap?

@Adirondackwannabe there is no rule that you can’t add shrimp scampi in a wrap. And you can add whatever vegetables you want. I sometimes use scampi when I am making shrimp Po’ boys.

As you said, ask your son where he had this dish. Italian flavors are so very different from Asian. If he just heard about it, have him get more details. You might even get the recipe from a friends’s mother.

It sounds like a Chinese eggroll or a fried Thai or Vietnamese spring roll. Maybe like This

Or maybe it was a Japanese Gyoza

Or a Japanese Tempura

Or Indian Shrimp Samosas

Or Indian Shrimp Pakoras

If he called it scampi, I would look for scampi recipes but maybe that’s just me.
