What's your recipe for Tabouli?
It’s time for those lovely cold summer salads. I am also looking for a couscous/cucumber/fresh mint dish. Please share your secrets.

That’s TABOULI, folks. Spell-check keeps changing it behind my back.
6 Bunches Parsley — chopped
⅔ Cup Bulgur
1 Quart Water
8 Medium Scallions — chopped
⅔ Cup fresh chopped mint
4 Large Tomatoes — finely chopped
2 Teaspoons Salt
1 Teaspoon Pepper
⅔ Cup Lemon Juice
½ Cup Olive Oil
Use the water to soak the wheat for a couple of minutes. Drain it. Add everything together mix, chill, serve. Be sure and wash and dry the fresh parsley and mint.
@disquisitive. Thank you. I would probably soak the wheat for 30 minutes.
Tabbouleh is the way it’s spelled in my circle of Lebanese folks.
@gailcalled In addition to @disquisitive‘s delicious recipe, you can also add in some crumbled feta cheese and/or some chickpeas : )

I ate so much food at my cousin’s 4th of July party yesterday, that I’m surprised I can even think about food. He and his wife actually fed us for lunch and then later for dinner. For lunch they actually made homemade pizzas (about 10 different varieties) and cooked them on the barbecue grill! Later they made fajitas on the barbecue. One of my cousin’s brought a garlic/lime quinoa salad that I’m itching to get the recipe for : )
@Kardamom: I am swooning over the concept of garlic/lime/ quinoa? Insist on the recipe and pass it on to us.
I also love the Persian cuke salad.
Personally, I do not like feta.

If you like the idea of the Persian cuke salad, another one (although not containing any of the ingredients you mentioned above) is another one of my favorites and kind of goes along with the Middle Eastern theme. It is Moroccan Carrot Salad
