A question towards those who are vegan; what are your favorite meals and dishes to prepare?

I’m not vegan, but I like roasted or sauteed veggies especially mushrooms, eggplant, and zuchini, with pasta or rice.
I really like the Morning Star original veggie patties for something premaid. I eat them on bread or with some sort of potato on the side.
I also make falafel and eat it with a side salad and sometines some pita or flatbread.
Many different salads. Mixed spring greens with apples and walnuts wth rasberry dressing. Mixed greens with sesame dressing. Iceberg, carrots, celery, with Italian or balsamic vinagrette.
Soups. Split pea, lentil, minestrone, pasta fagioli, vegetable.
I’m vegetarian rather than vegan, but much of what I cook at home is vegan. All kinds of vegetable and lentil soups, chili, etc. South Indian, Japanese and Thai curries. Lots of vegetable-laden red sauces with pasta. Cooked greens. Tempeh is one of my vegan protein staples.
Here’s my latest best-beloved (appeared at some time in the NYT.) Can be fiddled with (like most soup)

African Peanut Yam (or Sweet Potato) Soup
¾ c roasted, shelled peanuts chopped
2 T oil
1 med. onion chopped
1 T grated fresh ginger
1 T minced garlic
pinch of cayenne
salt and pepper
6 c veggie stock
2 ibs. yams or sweet potatoes- (Best if organic; for yams, leave on skin if you can)
8 plum tomatoes chopped
½ lb. kale, cut into ribbons, or spinach or collards
¼ c peanut butter
Saute onions, garlic and ginger in oil
Add ½ c peanuts and cayenne and sprinkle with s & p
Stir in stock, yams- bring to boil – cook few minutes- stir in tomatoes and kale, cook 10 min or until potatoes soft
Stir in ¼ peanut butter
serve with rest of chopped peanuts sprinkled on top
it is not vegan, but Eggplant-Parmesan is my favorite vegetarian dish. it does not have a lot a cheese so you could say is 90% vegan.
90% vegan is similar to being 10% pregnant.
You can replace the Parmesan cheese with this vegan substitute and make @lindasf ‘s meal 100% Vegan. (Or zero% pregnant for @gailcalled.) ;-)
That sounds so interesting I might try it with olive oil.
@gailcalled, I tried a similar recipe recently and felt like it was missing a little something. A squeeze of lime helped but I didn’t think I’d do it again—is it worth another shot?
I am also not a vegan but cook a lot of vegan stuff. Here are a couple that I’ve liked lately:
Curried vegetables
Daal
Pan fried tofu
Coconut milk soup and lentil soup are also old standbys in my house. Recipes available by request.
Smoothies & Juices.
My morning start:
1 c Raspberries
1.5c Coconut milk (unsweetened)
1Tbsp Raw Honey
1TBSP Sunflower seed butter
Blend and eat. Yum.
Sometimes I think Fluther doesn’t like me. I was in 2 recipes deep (without a single link) and poof! Everything is gone. So I guess I’ll try again, and try to write faster.
Another vegetarian here, not vegan. I love soup and soup is one of the dishes that is very easy to make, and easy to find vegan recipes, even of regular soups that originally were not vegan. I’m not going to write mine out again, because they flew off into cyberspace, but I’ll tell you what I like and try to find things that are fairly easy to make.
A question, though, @rockfan, isn’t one of your friends a vegan? Are you going to start cooking with and for her? That would be terrific if you cooked with her/him. Makes the whole vegan thing not seem so weird.
