Do you have a favorite snickerdoodle cookies recipe?

I had (store-bought) soft snickerdoodle cookies for the first time back in December and I fell in love with them. Now I want to make some from scratch but every recipe I’ve come across asks for cream of tartar. I don’t have any handy and won’t be going to the stores any time soon. Do you have a favorite recipe that doesn’t require cream of tartar? If not, what’s a viable substitute?

“If you don’t have any cream of tartar in your pantry, you can use one of these substitutes in its place:
For beating egg whites – use an equal amount of white vinegar or lemon juice, or omit the cream of tartar entirely
As a leavening agent – replace the baking soda and the cream of tartar in the recipe with baking powder. One teaspoon of baking powder replaces ⅓ tsp of baking soda and ⅔ tsp cream of tartar
For frosting – leave the cream of tartar out. No substitution is necessary.” Source

Snickerdoodles
(from Martha’s Holiday Cookies 2005)
makes about 20 (or 40, if you make the balls very small)
2¾ cups all purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1½ cups sugar
2 large eggs
2 tablespoons sugar
2 teaspoons ground cinnamon
1. Preheat oven to 350F. Sift together flour, baking powder and salt; set aside. Put butter and 1½ cups sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 3 minutes. Mix in eggs. Reduce speed to low; gradually mix in flour mixture.
2. Stir together cinnamon and remaining 2 tablespoons sugar in a small bowl. Shape dough into 20 (1¾-inch) balls; roll in cinnamon sugar. Space 3 inches apart on baking sheets lined with parchment paper.
3. Bake cookies, rotating sheets halfway through, until edges are golden, 12 to 15 minutes.

I googled “snickerdoodles without cream of tartar” and “substitutes for cream of tartar.” Not much heavy lifting.
But it’s still more than I did…lol
