Is it okay to use medium grain Japanese rice for fried rice?
I know how to make fried rice and I know that day old rice is best. I have some left over Japanese rice and I was going to make fried rice today. Would there be a difference in taste? I usually use Jasmine rice. I know Japanese tends to be more mushy and soft like sushi rice right?

Sure. You can use anything really.
You can use any rice at all, but it will be a little different. I often make mine with basmati rice, I find it is nice, but that is more suited for curry, it’s all good.
The texture and/or flavor might vary, but there’s no reason not to fry leftover rice of any kind. It’ll taste good.
Don’t forget to rinse whatever rice you choose in several cold water baths to minimize arsenic content.

Unless you cooked your rice with additional ingredients (e.g. sugar or vinegar are often added for sushi) then you can use it for fried rice. If it’s a softer type of rice fry it fast and hot so it doesn’t soak up too much oil.

It should be fine. In my experience medium grain rice tends to be more mushy than long grain. So maybe when frying, depending on your taste, use a bit less liquid and/or a slightly higher heat to fry. The thing about day old rice is that it tends to be drier and the grains stay more separate and don’t get too pasty.I also love jasmine and basmati rice! The difference in taste comes less from the length of the grain and more from the nature of the rice itself. Basmati is more nutty. Jasmine is more “flowery” and delicate. Long grain has a firmer texture.
