What can I make with these specific ingredients? (details inside)

Alright Fluther, I have a challenge for you.

I have a few things in my cabinet that need to be used. I’m tired of seeing them there and I don’t want to waste them.

I have

-4 cans of kidney beans
-4 cans of black beans
-4 cans of diced tomatoes
-a giant jar of jalepenos

What can I make with these items?

Get some spicy sausage and/or hamburger meat and make some chili!

I’m thinking Chili.

Give a large chili party. You’ll need to buy tortillas to make burritos to go with the chili. Jack cheese. Avocados. Lots of cut up fruit. Margueritas, if you like. Or Mexican beer.

OK hows this:

-2–3 pounds of hamburger
-1 onion
-3 cloves garlic

Brown the hamburger and then throw in the onion and garlic and sauté until soft.

Then put in this:
-4 cans of beans (any combination of the beans you have)
-4 cans tomatoes (assuming the cans are the same size as the beans. If they are the big cans, only use 2)

-1 can tomato paste
-Not sure what to tell you about the jalapeños, as I have no idea how big “giant” is. I’d say 4–8 oz maybe for this?

- 1 tbs worstershire sauce
– 1 tbs oregano
– 2 tsp cumin
– 1 tsp basil
– 1 tsp salt
– 1 tsp pepper
– 1 tsp sugar (to kill the acidity of the tomatoes)

Heat up until boiling and then let simmer for at least 2 hours.

This is a simplified version of this recipe which is awesome but a bit expensive and has a lot more ingredients. I tried to make a bare bones of it and accommodate for the jalapeños. So if you want to add the other ingredients, follow the link’s recipe.

Vegetarian chili, a lot of bean dip ,or bean soup

Stuff the jalapeños with cream cheese then totally over cook the beans and add the chopped tomatoes to make a thick sauce, add a bit of black pepper and lemon juice to this too then pour over the jalapeños. No idea what that is I just made it up. It’s what I would do with that cupboard full.

The black beans I would either eat with rice or make refried beans for my husband. I wouldn’t eat 4 cans all at once, but within a couple weeks they would be gone. For refried beens you just mash up the beans very well with the liquid it comes in (sometimes I use one of those hand mini blender thingies, sometimes a potato masher) add a little oil to a pan, some chopped onion, sautee a minute, then add the mashed beans. Cook on medium for several minutes moving them by stirring the edges to the middle and the beans on the bottom to the top. You can use them as a side dish, with tortilla chips, or in tacos.

My MIL makes incredible frijoles charros with black beans. Basically a bean soup. Mine never comes out like hers, but basically it is the beans, onion, tomato, bacon and bacon fat, and fresh jalapeño, salt to taste (you probably won’t need salt with canned beans). If you look up frijoles charros it probably has some recipes to follow.

The diced tomatoes, if I didn’t use them in the frijoles charros, I would make some pasta sauce or I would make chicken cacciatore or something similar. I like canned tomatoes, green pepper, mushrooms, onion, chicken thighs, a dash of cinnamon, a dash of nutmeg, and salt to taste. I cook it right on top of the stove, and then put it over pasta.

Another chicken dish is can of tomatoes, half an orange squeezed, and half a medium onion blended in a blender. Also on top of the stove with chicken thighs (some people prefer legs or wings) salt to taste. Over pasta also.

Kidney beans I rinse and drain and use in salads, or mix with chick peas and celery add dressing similar to a three bean salad and eat as a snack or with salad.

The jalapeños you can use on nachos and tacos.

‘Course I like to put jalapenos on top of my pizza, along with mushrooms and broccoli.

I also like to make nachos by loading up tortilla chips with hot refried beans, but you could use the black beans (maybe puree them a bit in the blender) shredded cheese and guacamole, topped with jalapenos.

Unless you feel the urge to use up all of these ingredients at once, the only thing I can think of is chili or bean soup, but even this amount of jalapenos would be way too much heat.

You could probably also make a big bowl of bean dip by adding some (probably not all) of the jalapenos with a can or 2 of the beans, rinsed and maybe some sour cream and shredded cheese, and diced tomatoes and chopped green onions, put all of this into the blender and blend well, but still a little bit chunky. Serve with chips or plop it onto tortillas.

You might be able to puree the jalapenos in a blender then put that into ice trays, then pop out the cubes and store in a ziplock bag in your freezer. That way you could pull out a few cubes here and there for dishes that call for jalapenos, but not in such a huge quantity.

Then you could make chili out of the rest of the beans, and some of the jalapenos and freeze some of that for later.

Here is a recipe for Barbecued Beef Sandwiches that calls for a whole cup of jalapenos.

Here’s a recipe for Crockpot Chili Shepherd’s Pie that sounds pretty good and is a little bit different.

Here is a recipe for Mexican Lasagna it calls for tortillas, but I think you could make something more like a real lasagna with noodles and these other ingredients.

I would suggest not trying to use up all of the ingredients at once. Maybe pick a few different recipes and spread them out over several months, so that you don’t get tired of beans, tomatoes and jalapenos. : )
