Do you make home made bread?

I do. I was given a bread maker many years ago…what a fantastic thing that is!
Yesterday I made some dough. I was thinking of some Hawaiian rolls I had picked up last week. They were sweeter than regular rolls and soooo good. So I threw some extra honey and brown sugar in my mix yesterday. I also use beer for my liquid.
I timed it just right so that when the grandkids got here after school I only had 3 minutes left on the bread maker.
Then my grand daughter and I proceeded to make 9 small loaves of bread. We baked them up. It is soooooo good! Beats anything you could ever get at a store.

I’ve made Amish bread before. So tasty! I don’t have a bread maker though, and I probably shouldn’t. I think I’d gain 10 lbs in the first week.

Best bread I make is banana and zucchini, but my pretzels are amazing as well.

Mom makes the best poppy-seed bread topped with orange juice icing. My personal favorite!

I just deleted my sourdough avatar. The starter was given to me by a friend who has used the same starter for like 30 years. My husband was the bread maker. We are no longer making bread though. We’ve given it up and lost a total of 45 pounds, so far, between the two of us.

RIP sourdough bread. I miss you.

I make good banana bread, too @KNOWITALL. Do you have any secrets you want to share with me? :)
Mine are
1) When a banana is turning ripe, to where the kids won’t eat it, I stick it in a zip lock on the freezer. It continues to ripen, but never spoils. You can leave it in there a year, and still use it. Makes a MUCH more bananaee flavored bread.

2) My recipe calls for 3 bananas. I use 4. I have to cook it about 15 minutes longer than the recipe calls for, and at 25 degrees less. But it makes a really moist bread. So good.

I’m so glad you asked this question! Earlier this year, I started to learn how to make bread. We don’t have a bread maker, and until recently, no mixer, so it was all done by hand. And you’re right…store-bought doesn’t hold a candle to homemade.

What I’m still trying to figure out is how to get it a bit fluffier. Is it in the the quality or type of yeast? The type of flour? How much it rises? What is the secret?

@Dutchess_III I often will use an extra ⅓ cup of oil for moistness, and sometimes I use local honey instead of white sugar, farm fresh eggs when possible, and local black walnuts (don’t pick them, they turn your hands black), and make sure to leave the batter lumpy, not smooth. Yummy!

And of course I never use yellow bananas in my bread, but I buy a big bunch of smaller bananas (when I have the rest of the items ready) and let them age naturally, while I pig out on smoothies every morning.

I just don’t like nuts in my banana bread! Or my ice cream! Or fudge! It screws up the texture, IMO. My family used to tease me about not liking “things” in my food. The first time I ever made potato salad my sister and brother in law said, “This is good…but something is missing. OH! It doesn’t have THINGS in it!” I learned to like chopped pickles and chopped eggs in it though.

@Dutchess_III Yeah, my husband is the same way, I often have to make him a seperate loaf minus the ‘stuff’, seems to plan to me but he loves it.

There is nothing better than a fully loaded baked potato potato salad, omg, that sounds sooooo good. Green onions, bacaon bits, sour cream and chives….mmmmmm.

Growing up we had some neighbors and the mom was German. Story was she and her older brother walked out of occupied Germany. She used the make the BEST bread. It was brown, and it was heavenly. At some point they moved. As a young adult I tracked her down to Missouri. No easy feat in the early 80’s, with no internet. I tracked her down specifically to ask for her recipe. She wouldn’t give it to me. :( I don’t understand that mentality.

Cream cheese? In your tater salad? Since it’s just my husband and I, I never buy potatoes but now I want some really bad, do you deliver out of state? lol

Hmmm, what part of Missouri, don’t make me go over there and wrestle her for it!! :)

Hm..I was thinking baked potato. What is a baked potato tato salad?

She’s probably gone by now. Maybe I can find something similar on the web.

All the stuff that is in a baked potato all mixed up with sour cream, it is incredibly addictive and really good after it sits and gets thoroughly cold, you should beware….lol

This could be the secret. That’s a helluva lot of flour tho! Also I would substitute a dark German lager for any liquids.

How do you make your potatoes? Boil them? Bake them? Do you peel them?

@Dutchess_III Baked is best, I always leave skin on all my potato dishes, for the nutrients.

I make homemade pizza dough and have, at times, shaped it into bread rolls instead. It’s delicious.

I saw this the other day and I’m definitely intrigued!! I really just want to see if it works, but I’m not very excited about how it might taste, but I guess we’ll see. Has anyone on here ever tried it? I’m not sure how I feel about wasting perfectly good ice cream in case it doesn’t turn out well…

I did, just two days ago.

Funny tale: My nephew was over and asked what that stuff was. I said dough lovely & nicely doubled in the bowl , for bread. He asked why? I said because I have this much bread in the house and showed him the last heal of bread in the bread box. He said, well in the city we just go out and buy another loaf.

Hmm.

He did not get to stay and taste the fresh stuff. Too bad for him.
