Favorite recipe for making homemade dolmas/ stuffed grape leaves (without meat)?

I bought some grape leaves at the farmers market, they are pre-marinated and ready to be stuffed. Any favorite vegetarian recipes for stuffed grape leaves/ dolmas? This is my first adventure making them myself.

Here is a typical one with a combo of rice, tomatoes, currants, pine nuts and diced onions, plus lots of spices. I would simplify the spices (not being a fan of allspice) but that is, of course, a matter of taste.
I can’t say I’ve tried this with dolmas, but I do know that in some recipes you can replace meat with some nice, meaty chopped mushrooms such as portabellos (or criminis) and lose nothing in the way of texture, flavor, or substantiality.
Any of the above, but you do need in include bulgar wheat, rice, pignolias, lemon, onion, and garlic. I have made them many times. I have decided I like it better using cabbage. I boil the big outside leaves just long enough that I can manipulate them. It’s cheaper and I always have it in the frig.
