What should I cook for 4 adults and 2 little kids in 90 degrees?

Well, it won’t be 90 indoors but what I mean is so many casseroles are for winter. Beef stew is strictly winter; beef curry I love but nobody else does; spaghetti seems too cheap, hamburgers too “expected.” I’m considering buying a large crockpot, putting ribs in it then he can stick them on the grill . Suggestions?

How about marinating chicken in garlic, lime juice and olive oil, and then having him grill it?
Thanks; that’s a good suggestion but I was really searching for a casserole since I’ll be exhausted by the time they arrive.
Here are some suggestions for healthy summer casseroles.
Make some vermicelli or linguine, chill. Add peeled shrimp (not the itsie-bitsie stuff) &/or lox bits, prosciutto? whatever, all, whatev’s. Niscoise and or good black green & olives. You want lotsa color maybe some boiled egg slices, cherry tomatoes, though Campari taste better, artichokes pieces? Look up an appropriate dressing & make or toss with something store-bought. Chill. Have a glass of wine. Serve with tossed greens & more antipasti stuff if desired and good bread (NO SLICED!) Consult the brothers on “City Slickers” for the best ice-cream dessert.
Sounds like grilled hot dogs, potato salad and watermelon weather to me. Add chocolate chip cookies. Everything is make ahead or cook outdoors. More extravagant? Add fruit salad, cold cuts and cheeses. Cold casserole of pasta and tuna salad.
Hamburgers, tossed green salad or cole slaw on the side. Fruit for dessert.
Barbecue and salad. Perhaps with a potato bake.
Poach and chill some salmon steaks early in the day, then grill tomatoes, yellow peppers, corn, and small, halved red potatoes on the barbecue.
Watermelon and ice cream for dessert.
Definitely cold watermellon, especially if the kids will be playing outside at all. Or, I always love an ice cream sandwich for a casual dessert that children and adults like if it isn’t a formal sit down thing.
What about baked ziti if you are considering something like spaghetti. Add some meatballs to go with it. You can buy frozen meatballs and a jar of sauce, just heat in a pan together.
Beef stroganoff over rice or noodles.
As far as casseroles, if you must, maybe a noodle kugel which is sweet and savory with a dash of cinnamon and nutmeg. Buy a roasted chicken in the store and serve.
Sloppy joes. Ground beef and a can of Manwich and sesame seed buns. Mixed fruit in a small individual dish with a small scoop of mango sorbet in it.
Hot weather calls for cold salads. As an added bonus, salads can be prepared in advanced and held in the refrigerator. My suggested menu:
Fresh fruit salad
Lori’s tarragon chicken salad
Lori’s balsamic-basil pototo salad
Lori’s sesame noodles
Cold asparagus in vinairette
I’ll be happy to share any/all of the “Lori” recipes if you’re interested.
Tuna noodle casserole.
Cheesy chicken and broccoli casserole.
Make sure you ask if there is anything they don’t eat.
Fire up the grill, and do hot dogs and a salad.
Order pizza and wings, serve with salad.
Why not have a small BBQ? Throw a few pieces of chicken or whatever on the grill, have some drinks, medium sized bowl of chips and dip..Ta da!
