Fish and asparagus?
Does fish go with asparagus? I was going to use cod, but not really sure what kind of sauce/dressing to do. Any suggestions please?

Yes, try this one with trout.
This one uses cod.
I don’t see why not. I like my asparagus roasted or grilled. Cod I usually just slightly salt and bake with slices of well salted tomatoes all over it and a little squeeze of lemon. I also like cod lightly breaded or battered and sauteed.
Asparagus goes beautifully with salmon, just for one instance—a favorite combination at my house.
One of my favorites of spring is fresh morels, asparagus and trout similar to this recipe.
I agree with @jeruba, we do a nice teriyaki salmon with grilled asparagus that is da bomb diggety. Honey, soy, ginger and garlic.
I love grilled salmon with asparagus or on a bed of spinach.
I think fish/asparagus would taste pretty awesome with a hollandaise sauce.

@Kardamom that grilled cod with baby potatoes and asparagus would be great topped with a dill cream sauce.
I have some dill growing out in the garden right now. I’ll have to give them a try once the plant is big enough. I like to mix horseradish and mayo with a good bit of fresh dill, makes a great dipping sauce for shrimp.
Pan-broiled filet of sole or scallops with asparagus is delicious.
@uberbatman :MY dill will be big enough to pick by next week. I grew the plants from last year’s seeds.
Fresh fish and vegetables do really nicely nicely with only some salt and pepper and a drizzle of olive oil.
Bernaise sauce is delicious on fish and on asparagus.
I love baked tilapia fish with chilled asparagus.
I had seared scallops and grilled asparagus just the other night, one of my favorite combos. My girlfriend had grilled asparagus with her cocoanut encrusted halibut. Delish!

We’ve been eating a lot of pickled asparagus. It goes with just about any fish.

Do you all bother to peel off the little scales before you cook the asparagus? It’s been one of life’s more troubling dilemmas for me.
I just cut off the tough ends and fry them in butter. I guess you could use some kind of sauce but it would, in my opinion, detract from the taste.
I prefer smaller, more tender spears of asparagus, @gailcalled. I don’t peel it before cooking. I have peeled, not really peeled, but sort of descaled, larger tougher spears.
Have any of you had any of that White Asparagus in the jars? It’s really tasty, and it’s fun because it kind of looks like penis’s (what is the plural of penis) I even like canned asparagus, although it’s very different in taste and texture to fresh. Same thing with peas, I like ‘em canned, fresh and frozen.
@gailcalled I generally don’t bother peeling the scales off myself, I’ve found as long as you break the asparagus where it feels like its naturally supposed to snap(sorry hard to explain) then everything cooks fine and its all pretty tender. Like @bkcunningham I do prefer the baby asparagus though. (funny how baby pretty much anything tastes better than the adult form. Must be the innocence or something :P)

Just layer the asparagus around a nice salmon fillet with seasonings and bake. Deee-licious!
I don’t eat salmon since learning about sea lice and how the pesticides in farmed salmon make their way to the wild salmon. Plus when you see videos and read about fish farming (i.e. fish farmed in East Asian countries living in sewage), it’s not too appetizing. I realize that farmed beef, pork and poultry is not much better, but my point is that people think when they’re eating fish they’re eating something especially healthy, more so than other types of meat, but it’s all bad.
@jca You can get wild Salmon. Alaskan, and a few months ago I bought some for some nordic country, it was some of the best salmon I ever had. I don’t remember which country? Norway? Sweden? I wish I remembered.
Meanwhile, the OP mentioned cod and everyone is talking about Salmon.
Just call it my opinion if you want, but it seems to me that “fish” includes salmon. Details: “Does fish go with asparagus?”
@Jeruba Reading the answers over again I don’t know why the salmon answers stood out so much to me. People did suggest other fishes. I think only @Kardamom and I acknowledged the cod the OP was already contemplating.
@JLeslie: I know there’s wild salmon, but as I stated, the wild salmon get contaminated with the pesticides used to exterminate the sea lice because the farmed salmon are in pens but they’re still in the ocean. Wild salmon has been found to have antibiotics and pesticides that are given to the farmed salmon (if you google it you will find it’s true). I’m sure the wild salmon you ate was good but I’m saying that when people get salmon from a supermarket or restaurant, they don’t really know the origin of what they’re getting and are relying on the truthfulness of the supplier. Regardless of the truthfulness of the supplier, even if it’s wild salmon, it might not be a whole lot different than farmed salmon.
Add to that the other fish (tilapia, etc.) being farmed in sewage and it makes me anti-fish altogether.
@jca Oh, my mistake, I didn’t understand the sea lice was regarding wild salmon. I agree there are contaminents wild and farmed. My mom told me never to eat fish from China, and I basically do whatever she says, although when eating out I don’t concern myself with it. My mom reads up on this stuff, and I can’t remember all the warnings she has given me. Some wild fish are safer, some farmed fish are safer. According to her. After the nuclear plant disaster in Japan from the earthquake she became weary of fish from the Pacific. When I was in Alaska it felt to me like the fish there would be safe. Just a feeling based on nothing but the people seemed very at one with nature and there are laws up there for fishing. It is hard to know what to do. Basically, most foods in America can be nerve wracking to consider consuming the way we mass produce so much of it.

Did you mean “wary” (i.e., cautious, apprehensive) rather than “weary” (i.e., tired)?
Of course, you all know that I’m a vegetarian and don’t eat fish at all, but that’s a whole other subject.

Just to let you all know, I had cod, stuffed peppers, chorizo and asparagus and it was delicious.
