The best one to listen to, for me, is Jimi Hendrix’s national anthem. It’s friggin amazing.

It’s actually pretty hard to play, from what I’ve heard, which is kind of baffling. Why do people always want to try starting out on that song?!

I’m with hahmoore on the Jimi tip but I’d say that his solos on All Along the Watchtower are absolutely epic. Pure feeling and lots of variety.
What about the guitar solo in the movie Crossroads made famous by Ry Cooder?
I also love the work of Django Reinhardt, Joe Pass and Tal Farlow in the jazz genre.

How has Eddie Van Halen’s Eruption not been mentioned! In my opinion he is the greatest guitarist of all time, and that is one of the most amazing solos.
Pretty much anything J. Mascis plays.
Here is an amazing clip of Mr. Mascis in Sweden, acoustic, fuzz box, stack ‘o Marshalls. It’s kinda loud though, so prepare.
