Tell me what great salad I can make myself tonight?

He’s having steak so I’m having salad which happens a lot. Here is what I have that I can use. This has to keep me reasonably full until morning: I have:
an avocado
a can of black beans
a head of leaf lettuce; bag of mixed lettuce
red and yellow onions
croutons
green onions
tomatoes
What would you use for your big dinner salad? I already have the dressing I’m using; I won’t eat salad dry or with just lemon juice. lol Thanks so much for your suggestions!

Sounds like you already have your salad right there… Sort of a southwest style salad. Definitely put in the black beans for protein. Maybe half a can. And I would recommend using whichever kind of lettuce needs to be used first (I hate wasting food). Finally, unless the red or yellow onions are sweet, I recommend using the green onions.

Do you have other things in your fridge or pantry that you can use? Would you be willing to eat some of the steak?

The first thing that popped into my head was Vietnamese Steak Salad

Do you have any noodles? If so you could make this Smoky Avocado and Black Bean Salad

Or this Southwestern Style Pasta Salad

You could also make a Taco Salad with or without the steak. You could also add chicken if you want.

My fav. simple little salad is to just slice up cucumbers, red and yellow cherry tomatoes and black olives in a red wine vinegar dressing. Artichoke hearts are great in it too! Mmm…so easy, refreshing and delicious. ( I am waiting on my first cucumber in the garden to gain a little more length and girth for my salad. lol

Coloma, I don’t have any black olives or artichoke hearts = don’t like either one anyway but thank you .

@Kardamom that looks very delicious but I don’t have any cilantro and I know how important it would be to that salad. I really am interested in it. I do have xfirm tofu I forgot about.

@Aster, if you are down for some cooking, you could sauté the tofu in a tablespoon of olive oil, along with onions and tomatoes.

Then you could have a little green salad of lettuce, some black beans, green onions, and avocado on the side. That would be a very filling meal, high fiber and protein and low carbs.

My wife makes a wonderful, refreshing summer salad by combining cubed fresh peaches and cubed tomatoes (equal quantities), walnut pieces, and a balsamic vinaigrette.

I would use everything you have, but add a chopped hard boiled egg and some grated cheddar or feta.

Or just have it as you have listed – that sounds wonderful and filling to me!

All of it. Cube the avocado and sprinkle with lemon juice. Dice the onion and tomatoes. Drain the black beans.

Today I have a cucumber and some cherry tomatoes to pick in my garden, I also have some nice little zuchinni…a yummy salad for me tonight. :-)

I boiled some pasta then mixed it with blended avocado and garlic and added tomatoes. I couldn’t find black beans but it was delicious!! I’m going to buy more avocados, beans and cilantro for next time. Thanks again, @Kardamom .
