Tried and true vegetarian recipes for people are who aren't the greatest cooks?

I need some simple, easy, yet delicious recipes. Stuff that I could freeze, preferably.

This is a great site.

Some of the recipes I don’t do because I am a strict vegan, but I can tell you that sweet potato and chick pea risotto is really easy and very good. In fact I have some in the freezer :) I just substituted some of the dairy ingredients for vegan non dairy ingredients. It’s kind of sweet tasting.

I haven’t tried any other recipes from that site yet. Tonite it’s vegan pizza not really freezer friendly.

Also black bean and quinoa another one of my favs tastes better with the noodle type of quinoa, you can also stuff it in a wrap, my daughter does that. Here is the recipe and the leftovers can be frozen:

1 teaspoon olive oil or vegetable oil

1 onion, chopped

3 cloves garlic, peeled and chopped

¾ cup uncooked quinoa

1½ cups vegetable broth

1 teaspoon ground cumin

¼ teaspoon cayenne pepper

salt and pepper to taste

1 cup frozen corn kernels

2 (15 ounce) cans black beans, rinsed and drained

½ cup chopped fresh cilantro
Original recipe yields 10 servingsDirections

Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.

Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,

Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.

That is one of my favorite recipes. :p

Squash Casserole
5–6 Yellow Summer Squash, peeled and sliced
½ onion, finely diced
¼ red bell pepper, diced
salt
pepper
3–4 eggs
1 slice bread, crumbed
½ c. milk, cream or half and half
¾ c. grated cheddar cheese (sharper the better)
Boil the squash until tender (around 10 min.), Place in a colander and mash with a fork to remove the water from inside the squash.
Saute the onion and bell pepper in a mix of butter and olive oil until tender.
Combine the squash, onion and pepper with the breadcrumbs in an ovenproof casserole dish. Season the mixture with salt and pepper to taste.
In a separate bowl, beat the eggs until well mixed. Stir in the milk or cream. Pour over the squash mixture. Sprinkle on the cheese.
Bake in a 350 degree oven for 30–40 minutes.

Vegetarian lasagna. You can find recipes all over and most recipes are highly tolerant of improvisation. You basically can’t go wrong.

Portabellas are super easy to cook and all you really need is some butter and garlic and they’re amazing.

I like to take a portabella mushroom and put a little oil and garlic on it then a tomato and throw it in the oven. Let it cook for a while until its about half way done. Add some fresh basil on and let that cook a bit and then top it with cheese. Once it’s all melty pull it out. YUM

I also like to take baby bellas and stuff them. They’re great because you can freeze them and then just pop them right in the oven when you want them and they cook pretty fast. I take onion, tomato, bell peppers chopped finely and saute them up in a pan. Once they’re done you can use this mix to stuff the mushrooms(adding bleu cheese makes this recipe amazing) and then just freeze them on a tray. Once they’re frozen you can take them off the try and put them in a more space efficient container.

I made a lentil quinoa dip the other day or chili..It was delish.

lentils in one pot extra water.

then start carmelizing onions and little bit later brown quinoa for 5 or ten minutes. Then dump that in the lentil water lentils get a full cook time of an hour quinoa about 15.

I threw in some peppers some chili and lemon basil.

Used it as a dip for carrot sticks and celery.

Cashew cole slaw…easy and delicious. Just make your fav. cole slaw recipe with a creamy dressing and toss in a can of Cashew halves.
Also, veggie quesadillas, ( I love cheese, but you can just grill the veggies of your choice in a tortilla. )
All kinds of easy veggie soups, start with an herb, veggie stock and go nuts!
I’m a sucker for cabbage and make a great, cabbage, potato and onion cream soup.

Veggie pasta sauce, just use all the usual ingredients but no meat and serve over your pasta of choice, also veggie, also veggie lasagne. :-)

Scamble egg, put on toast, add a slice of tomato. Dinner.

Fresh tomatoes at this time of year give you Caprese salad, gazpacho-skip the hot sauce and bruschetta.

Make your own marinara sauce for use during the non-summer months. You can freeze vegetarian lasagna, made with mushrooms and zucchini and whole-wheat pasta also. Recipes available everywhere.

Vegetable soup. Chopped up onion, carrots and celery. Fresh green beans, a can of diced tomatoes, some vegetable stock. Salt pepper, fresh oregano, bay leaf. Simmer till veggies are tender. Toss in some cubed russet potatoes, simmer till the potatoes are firm but not hard. Toss in some canned beans, like northerns or cannellis. A little barley. Browned tofu sausage if you want to make it look like it has meat in it.

I make this every Sunday in the winter and eat it for dinner if I am alone, or too tired to make a plate dinner.

Eat and freeze in baggies. Eat it all week.

Also, eggplant lasagna. Take any lasagna recipe, cut back on liquid, and use thin slices of eggplant instead of pasta. No gluten, no glycemic index problem.

Pizza Rice (from the famous book “Diet For a Small Planet)

Best with leftover rice but you can cook fresh.

In casserole dish, alternate layers of Pizza/Spaghetti sauce, rice, Mozzarella cheese, Parmesan cheese.

Sprinkle each layer with Basil and Oregano seasoning plus salt and pepper to taste.

Begin with layer of sauce in bottom and end with layer of cheese on top.

Bake in med. oven till hot and bubbly. 30–45 mins.

Entire dish can be frozen prior to baking.

For variation you can add layers of mushrooms or spinach or whatever else you like on a pizza.

Try this black bean vegetable soup. I’ve made it countless times and it’s easy, delicious and filling. The recipe doesn’t call for them, but I usually also add zucchini, yellow squash, and broccoli. I then top it off with crushed up tortilla chips and shredded cheese (once it’s in a serving bowl, that is, and not to the whole batch).

OK, I’m back hope you like some of these choices : )

(Some of them sound like they have a lot of ingredients, but they’re very common fridge and pantry items, and mostly it’s just involves sauteing an onion and steaming or boiling a vegetable, and then throwing the rest of the ingredients together, so it’s not complicated cooking, but I wanted to give you ideas that would be really tasty and can be eaten for several days in a row. Also the salads are more like main dishes, rather than side dishes )
