What foods go well with a tomato-garlic salad dressing?

I made a great tasting dressing from scratch, but I’m not sure what I should add to the salad. Any suggestions? Here’s the salad dressing recipe:

¼ cup extra virgin olive oil
¼ cup red-wine vinegar
¼ cup parsley
1 medium tomato, seeded
5 anchovy fillets
2 cloves garlic
1 tablespoon capers, rinsed

Personally I like a little thicker dressing. I also like coconut, and I have started mixing coconut butter in with the salad dressing until it’s completely incorporated. It works nicely.

To me, it’s how you put the salad together. I take all the tiny pieces such as sliced almonds, bits of mushroom and avocado, slivers of cucumber, etc. and toss them together in a bowl to thoroughly coat before you toss them again with the lettuce. It seems to help them stick to the lettuce and not end up at the bottom of the salad bowl.

Toasting your slivered almonds are also a great addition, also sunflower seeds, chopped green onions, tiny bits of red pepper, as well as bits of mandarin orange, yellow squash, or apple.

I go through the produce aisle and look for brightly colored fruit and veggies to add to my salads and soups.

That recipe is just calling for some fresh mozzarella cheese.

I’d use that with a shrimp or steak dish. It’d be a great marinade for either.

Bread (sounds a bit like a brouschetta) on beans or rice how bout piled up on a pork chop.

Sounds like a great dressing which would be very versatile. Use it with veggie salads or with added hard-boiled eggs, shrimp, salami chunks, ham or other smoked meats, cheese, nuts. It would also be good on cooked veggies, in potato salad. I don’t think it would be good on fruit, but otherwise, it would be good with almost any combination of meat, fish or veggies.

Could marinate chicken in it and then bake it.

For a cold lunch I mix beans (kidney, black beans, blackeyed peas, etc) with Trader Joe’s Soycutash.

Sometimes I add chunks of chicken or hard boiled egg. It’s good on pasta, too.

Your dressing would be great with that.
