Are potatoes that have sprouted still ok to eat?

You buy a bag of potatoes cause you want potatoes with dinner. But oftentimes you end with four or five or six potatoes still in the plastic bag. We put the bag in a hanging basket thing and they sit there unloved and unused for a while and then you go and want to cook them and they have sprouted, maybe with little flowers, and your wife says throw them away, once they have sprouted, they’re no good.

Is she right?

What you really want to beware of is if they have a green cast to them. This is why its not really good to keep them exposed to sunlight in those hanging baskets.

The green tinge indicates the presence of Solanin which is a neurotoxin. Sometimes you are safe it you peel the potato deeper than usual.

There’s nothing dangerous about sprouting afaik. It’s more of a texture thing because the sprouts use up moisture from the potato so it affects the texture. They won’t be as fluffy if your mashing them. They will be denser.

But that’s aesthetics not safety. I only worry about potatoes with too much green to them. Even if they’ve sprouted, I just cut the sprouted part out and eat them anyhow. Other people toss them. To each his own.

My understanding is that the toxin in green potatoes is water soluble. They’re fine if you boil them (and throw the water out), but shouldn’t be fried or baked, especially if any green is left after peeling.

I’ve never thrown away a sprouted potato, and my happy Irish arse is still kicking.

Now when they get soft, that’s just gross.

Not a problem, just peel the sprout sites a little extra deep and bake or boil.
Now…let me tell you, if you ever forget a potato in a plastic bag and it ferments..OMG!
Once A couple potatoes fell into the back of the pantry and I thought I was smelling cat shit. haha
My cats never go in the house but the smell was the smell of cat crap.

Finally I found the mystery smell, 3 potatoes in a plastic bag that were almost Vodka. Oh man….bad, really, really, baaaad! lol

It is safe to eat a sprouted potato if it is still firm, a soft potato is on it’s way to going bad. Just cut away those sprouts and the potatoes will be quite safe to eat.

I rub off the sprouts and eat the potato.
I run potatoes through a mandolin and fry them in olive oil. Add a little salt or Zatarains. Deeelish!

To repeat what others have said about green potatoes, I just learned this myself a few weeks ago.

Sprouting? That’s nothing. Break them off and go with those taters.

Just remove the sprouts and they are fine to consume.

Wow I have never seen a green tato.. guess I love them too much… But yeah don’t eat the sprouts and I do dig extra deep around those suckers. In fact you could cut the whole section off and plant them.

My mum replants potatoes that have sprouted, means you get even more Potatoes, but if you don’t want to replant it and just eat it, that should be fine, I mean my mum also uses them when they are like that, I can’t imagine that you’d die from eating a potato that has already sprouted.
