What's your favorite soup?

I asked this question when I was on Askville, and there was some very good sharing. Please share your favorite, mine is my own potato soup. If you have a recipe to pass along, please do.

I improved Olive Garden’s Zuppa Toscana. It’s spicier, and creamier, and sausagey-er and potatoey-er, and yummier.

Gods, I haven’t made that in ages. I hope I can remember how to do it. ^_^

My friend made a cream of crab soup the other night that, well, if it had been my last meal on earth, that would have been okay. (Not because I want to die, but because it was that good.)

But if I’m looking at poor man’s rations…cream of mushroom soup is my comfort soup.

Cheese.

There’s a local restaurant that makes the best cheese soup! It has veggies and noodles in it. They have this great little salad bar. Not only is cheese soup included, but so are the homemade cinnamon rolls.

“I’ll have the Cajun grilled catfish filet, American fries with onions and the veggie of the day. TO GO. Oh, and I’ll be eating salad bar.

@yankeetooter CAN YOU GET ME THE RECIPE? I have 16 pounds of crab meat in my fridge and I’m looking for tried-&-true recipes!

It’s based on this roasted tomato and pepper recipe. I swap out one cup of stock for one cup of half-and-half to make it a creamier soup and don’t usually add cheese. Sometimes I’ll make it with tortellini, sometimes I’ll swap the pasta for leftover meat, but usually I will have it as a simple soup with a side of grilled cheese. I have grape tomatoes (which I prefer over cherry) waiting in the fridge to be soup-ified.

Mulligatawny. I’ve been looking for a good recipe for ages, so if anyone has one that they’ve used (‘coz I already has the Google), I’d be interested. :)

My mother’s oxtail soup which, sadly, is no longer available to me. You may go “yuck” at the mention of oxtail (there was another thread about this some months ago), but believe me, this was a feast fit for the gods, thanks to its combination of ingredients (vegetables, barley, seasonings and one or two large oxtail bones loaded with meat and marrow) that mother simmered in a huge pot on low heat from just after lunch to suppertime. The perfect winter dish with hunks of bread and butter.

Beef noodles… Just beef and noodles, and salt. I can handle ichban store made.

I’m sure there’s probably a better answer to this question, but the first two that come to mind are:

- Gregoire’s crab bisque
La Barca’s sopa 7 mares bouillabaisse

Actually a bouillabaisse is a stew,
so I guess La Barca is disqualified.

@Pachyderm_In_The_Room Oxtail makes the richest and most delicious beef soup possible. I remember thinking it was gross when my aunt was given our oxtail when I was a kid. Gross until I ATE some! YUM!

I think just the name “oxtail” puts lots of youngsters off it! Once we grow up and taste it, that’s a different story.

My favorite soup is potato – I make it with large chunks of potatoes, sprinkle a really sharp cheddar cheese in the bottom of my bowl and then again on top of the soup (with green onions) and serve it with homemade cornbread. Yum…..

@talljasperman That sounds like my kind of soup – the simpler the better. Do you just use beef stock for the base?

Yum. I love potato soup, too, @laurenkem.
Nice and thick.

I wasn’t ever a particularly squeamish eater…she made the oxtail soup, I ate it. And LOVED it.

@ibstubro I was an extremely picky eater (still am sometimes!) and I know that if my mother had ever put anything in front of me that had the word “oxtail” in it, my first response would have been “EWWWW”. Then I would have pictured an ox running around with no tail on it, lol.

@laurenkem I had actually seen the large, round slices of oxtail laying in the freezer. If you think that an oxtail is not an appetizing sight, try slicing it!

@aurenkem, thank goodness my parents, especially my dad, encouraged my mother, brother and me to try everything at least once. He said if we didn’t like it that was okay, but he didn’t want us to miss discovering a wonderful new food just because it didn’t sound good. Guess what? Most of the time we loved what he introduced us to and today, I my brother and I love eating all kinds of food because of that early training.

Gosh, folks, I didn’t mean this thread into an anti-Oxtail rant, but I do recall there was a lot of pushback when the topic came up once before. I wonder how many people who say they don’t like it have avoided trying this rich, delicious beef in soup just because of its name.

Another soup I love and eat a couple of times a week is chicken or beef Pho.

@Pachyderm_In_The_Room I think you’re good. So far the oxtails have it. I haven’t eaten meat in, like, 20 years and you have MY vote!

@Pachyderm_In_The_Room It almost seemed like it was just Mulligatawny (sp?) and Lobster Bisque. Damn, I miss that show

It would be interesting to see it set in 2013.

I love soup!

Here are some of my favorites:

Chinese Hot and Sour Soup (only I added 6 Tablespoons of vinegar instead of 2 to make it taste identical to a soup that I got at a favorite restaurant many years ago. Really gets my endorphins flowing.

Thai Tom Kha . This soup is like a romance in your mouth.

Egg Drop Soup. This is my go-to comfort soup (instead of chicken soup, because I’m a vegetarian).

Split Pea Soup a slightly updated version of a childhood favorite. So good on a cold fall day.

Potato Beer Cheese Soup. Decadence in a bowl.

I can’t pick one soup. My fav’s are:

Minestrone (I don’t like when it has a lot of herbs in it, and I don’t want any cheese in it. Gross.).

Lentil (all types).

My black bean soup (which is a version of Frijoles Charros without the bacon. The bacon version is of course much more amazing).

Matzoh Ball soup (especially my grandmother’s).

Japanese onion soup (I don’t know what it is called).

French onion soup no croutons (I hate soggy bread).

Olive Gardens Pasta Fagioli (I can’t believe I even write that, because most of their food is disgusting, and their pasta fagioli is nothing like anything you would find in Italy as far as I know).

Wonton soup (I especially like it with small julienne type slices of the red pork is added to the broth and some bok choy in there for some green).

Split pea (no dairy in there at all. Again, gross).

WOW, GOSH! It smells delicious in here! I’m finding forgotten faves and untried raves here. Wow. When you have a list of yummy ideas, you should post separate, so I can GA each one, or at least each yummiest sounding ones.
Nobody apologize for simple recipes. Yummuy and no fuss together is genious, not something for which we apologize!
Egg drop is also my daughter’s fave when sick, @Kardamom.

@JLeslie, what an enticing list! I agree with you about soggy bread, except in the case of plain old canned chicken noodle. Don’t remember what caused me to try it, but I’ve come to love that. I soak up lots of crackers in my potato soup, but with ch. noodle I need a few slices of bread, and some garlic powder. When I’m sick, I want it really steamy hot, and then drink super frosty cold juice (usually apple) with it. Don’t know what it is about the contrast in temps, but it really helps.

@Jonesn4burgers I’m on board with you with the hot chicken noodle and cold juice. I would pick apple also for that, or even cold coca cola. I was a cocaholic in the past, but have been caffeine free about 15 years, with some cheats now and then. Chicken soup and cold Coke, no ice, would be a comfort combination for me. No bread, crackers on the side maybe. If you like the canned Campbell’s chicken noodle, you might give chicken and stars a try. You would think it is all the same, but it isn’t in my opinion.

My dad’s carrot-fennel soup. This recipe is pretty close, except my dad also adds peas (which get pureed with everything else).

I forgot about this fabulous vegetarian phở that I had at an Asian restaurant awhile back. It’s a Vietnamese noodle soup, generally made with beef broth.

I make an awesome pumpkin soup with homegrown pumpkin puree, sauteed onions, flax milk, vegetable broth water and a little bit of red quinoa for texture.

The best thing about this soup is you can substitute the pumpkin for any of the other fruits in the squashy type family…pumpkin is a fruit! ;) I’m also thinking substitute it with sweet potatoe. Yummy.

Homemade Italian Wedding soup is my all time favorite soup followed closely by
Miso soup, and Tortilla soup
