Do you grate the skin with the zucchini, or cut it off and discard it?

I grate the skin with the zucchini.
If the zucchini is young and unsprayed (from your garden or grown locally), I grate it, skin and all. I also eat the skin when I slice zucchini thin for a salad or sauté (or in veggie lasagna).
NUtrients are in the skin so grate it all in food processor.
I leave the skin on. It also gives your bread that nifty appearance with the little green specks.
I have only ever made zucchini chocolate cake and always left the skin on.
