Calling all cooks! Does anyone have a delicious applesauce recipe?

I am up to my eyeballs in an apple harvest over here and it is too hot to bake. I am looking for a yummy applesauce recipe, or other non-baking apple recipes. The horses and I can’t eat any more raw apples or we’re going to colic. haha

P.S. I’d like to use the skins as well if possible for an extra zing.
I used to just chop them up, cook them down with a teeny bit of water and then run them through a food mill. The food mill will leave the skin behind but you have cooked them with the skin on. Depending on your taste, you can either add some sugar, cinnamon or lemon juice; I usually added none of that if the apples were tasty.
I chop with the skins on, boil with a little water, and mash with either a fork or a potato masher. I like texture and I like chunky. I may add a tiny bit of sugar and cinnamon and leave it at that.
Thanks guys! It’s a plan, I shall make applesauce later with wine, er, while I am drinking wine after the chores are done. haha I have some really good cheeses too so applesauce and cheese will be dinner tonight. :-)
Yum. I never thought of adding wine.
Other non-baking apple recipe: Roast over a campfire. Eat with sugar and cinnamon.

Here this is; from my sister who uses small apples from her own trees.
“Just quarter and de seed, cook down with some apple cider or water and cinnamon until mushy and mash with a potato masher or if you want the skins removed used a Foley food mill to mash and skins will be left behind.”
No, but I do have an additional suggestion for your apples: charoset. Easy to make, takes any ingredients you have on hand, often involves wine, and delicious on anything (but especially on matzah with some horseradish). Also, baked apples with golden raisins and cinnamon inside. Damn, now I need to go pick some apples.
Charoset is also really good just wrapped in romaine lettuce leave.
Before serving, warm applesauce and add a bit of butter.
